Lõigatud šokolaadiküpsised / Cut Chocolate Biscuits



Kuna siinkandis pole Eesti küpsistega just laiata, siis tegin maasikate ja šokolaadiga küpsisekoogi jaoks need ise. Kuigi need küpsised ei sarnane eriti Eesti küpsistele, olid nad väga head ja sobisid kooki hästi. Kui aus olla siis ma proovisin kahte retsepti, millest jäi peale just see. Leigena olid nad väljast krõmpsud, kuid seest veidi pehmed, just nii meeldisid nad mulle kõige rohkem. Paljalt söömiseks soovitangi neid paar minutit vähem küpsetada.

Due to the lack of Estonian biscuits here in Luxembourg I made these to substitute for the biscuit cake with strawberries and chocolate. They are not very similar to the original ones, nevertheless, they were tasty and suited in the cake. As a matter of fact I tried two different recipes and these biscuits were a lot better. Lukewarm, they were crunchy on the outside but still slightly soft inside which I like the best. If you are making them for the purpose of eating not to be put into the cake then I suggest you reduce the baking time by a few minutes.

Nii siit kui sealt võib lugeda, et täisteraküpsetised ei ole ikka nii head kui peene nisujahuga tehtud. Seda väidet otsustasin ma nende küpsiste peal järgi proovida, tehes neid kahe erineva jahuga. Üllatus -üllatus , täisteraversioon oli maitsvam!

Koogi jaoks jätsin küpsistel kaunistuse ära, paljalt söömiseks tasub lisada küll.

Vaja läheb (saja kahesentimeetrise küpsise jaoks):
5 dl (täistera)nisujahu
2 1/2 dl suhkrut
4 spl kakaopulbrit
1 spl vanillisuhkrut
1 tl küpsetuspulbrit
200 g margariini või võid toatemperatuuril
1 muna


Määrimiseks
1/2-1 muna

Kaunistamiseks
pärlsuhkrut või hakitud pähkleid (nt mandel)

Keera ahi 200 kraadi juurde sooja. Pane kuivained lauale või kaussi kuhja. Lisa toasoe rasvaine ja muna. Sega tainas kiiresti ühtlaseks. Jaga tainas kuueks. Vormi neist sõrmejämedused piklikud tükid. Pane need küpsetuspaberile või määritud plaatidele. Vajuta rullid lamedamaks. Määri lahtiklopitud munaga. Raputa peale pärlsuhkur, mis on soovi korral segatud pähklitega. Küpseta ahju keskosas 200 kraadi juures umbes 15 minutit. Lase küpsistel paar minutit jahtuda ja lõika siis diagonaalselt umbes 2 cm laiusteks tükkideks.

I have read in a number of places that whole wheat baked goods are not as tasty as refined flour goods so I decided to give it a try. I baked one batch with whole wheat flour and the other with all-purpose flour and guess what - the whole wheat ones were better.

I skipped the decoration as I needed plain cookies for the cake but if you are not making them for that purpose then the decorations will be relevant.

You'll need (for 100 2cm long biscuits):
5 dl (whole wheat) flour
2 1/2 dl sugar
4 tbsp cocoa powder
1 tbsp vanilla sugar
1 tsp baking powder
200 g margarine or butter, room temperature
1 egg


For smearing
1/2 - 1 egg

Decoration
nib sugar or chopped nuts (eg. almonds)

Preheat the oven to 200 degrees. Mix the dry ingredients in a bowl. Add the butter and egg. Mix until just combined. Divide the dough into 6 parts. Form each part into a finger-thick roll. Place them on lined baking sheets. Press the rolls flatter. Smear the biscuits with the whisked egg. Sprinkle some nib sugar or nuts on top and bake at 200 degrees for about 15 minutes. Let them cool for a few minutes, then cut them diagonally into 2 cm long pieces.
