Vaja läheb:
Biskviitkihid:
50 g tumedat kakaod
75 g fariinsuhkrut
250 ml keevat vett
225 g nisujahu (millest poole võib täisteranisujahuga asendada)
1/2 tl küpsetuspulber
1/2 tl soodat
125 g toasooja võid (millest poole võib õunakastmega asendada)
125 g suhkrut
2 tl vanilliekstrakti
2 muna
Täidis-kreem:
200 ml vahukoort
300 g toorjuustu
1 dl tuhksuhkrut
2 tl vanillisuhkrut
1 pakk ehk 8 g vahukoorestabilisaatorit
175 g domino või oreo küpsiseid
Kaunistuseks:
8 domino või oreo küpsist (a la 80 g)
8 suurt maasikat
Määri kaks lahtikäivat koogivõrmi võiga (minu omad oli umbes 24 cm, retseptis nõuti 20seid). Sega vispliga kakao, fariinsuhkur ja keev vesi ning jäta jahtuma. Sega omavahel jahu, küpsetuspulber ning sooda. Vahusta või ja suhkur helekollaseks, kui kasutad õunakastet siis lisa see peale vahustamist. Vahustamist jätkates lisa vanilliekstrakt, seejärel üks muna ja koheselt peale seda suur supilusikatäis jahu-segu. Lisa ka teine muna ning vahustamist jätkates ülejäänud jahu-segu. Sega hoolikalt hulka kakao-vesi, jälgides, et tainasse ei jääks tükke. Jaga tainas ettevalmistatud vormide vahel ning küpseta 180 kraadi juures 30 minutit või seni kuni kookide keskosasse surutud tikk tuleb puhtalt välja. Enne kihtide ladumist lase põhjadel jahtuda.
Täidiskreemi jaoks vahusta koor ning lisa kõik ülejäänud ained. Vahusta kuni kreemile jäävad teravad tipud. Haki ning sega hulka küpsised.
Kõige mõtekam on kook laduda serveerimistaldrikule. Aseta ühele biskviitpõhjale pool kreemist, tõsta peale teine põhi ning kata kreemiga. Hoia tort serveerimiseni külmas. Enne sööma asumist kaunista maasikate ning hakitud küpsistega.

I baked this cake for my brother's 16th birthday which is on the first day of Autumn. The birthday child asked for something, anything with oreos and this decadent-looking yet quite easy to make cake seemed appropriate for the occasion. Both my brother and the quests were very pleased with it, I was also quite positively surprised with the outcome.
You may also use Dominos, the Finnish equivalent to Oreos.
You'll need:
For the cake layers:
50 g best-quality cocoa powder, sifted
75 g dark muscovado sugar
250 ml boiling water
225 g plain flour (half of which could be substituted for whole grain flour)
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
125 g soft unsalted butter (half of which can be substituted with apple sauce)
125 g caster sugar
2 teaspoons vanilla extract
2 eggs
For the cream:
200 ml double cream
300 g cream cheese
1 dl caster sugar
2 tl vanilla sugar
1 sachet (8 g) of whip cream stabiliser
175 g oreo or domino bisquits
For decoration:
8 domino or oreo bisquits (a la 80 g)
8 big strawberries
Preheat the oven to 180 degrees.Line the bottoms of two springforms (mine were 24 cm, the recipe calls for 20) with parchment paper and butter the sides.
Whisk to mix the cocoa, muscovado sugar and boiling water, set aside. Stir the flour, baking powder and baking soda together in another bowl, set aside.
Cream the butter and caster sugar together, beating well until pale and fluffy. Beat in the apple sauce, if using. Dribble the vanilla extract into the butter-sugar mixture, mixing all the while, then drop in 1 egg, quickly followed by a scoopful of flour mixture, then the second egg.
Keep mixing and incorporate the rest of the dried ingredients for the cake, then finally mix and fold in the cocoa mixture, making sure not to leave in any lumps.
Divide the batter between the two prepared springforms and bake for about 30 minutes or until a cake tester comes out clean. Let the cakes cool completely before layering with the cream.
To make the filling whisk the double cream, add the rest of the ingredients and whisk until soft peaks appear. Stir in the chopped bisquits.
It's best to layer the cake on the plate you are going to serve it on. Spread half of the cream filling on one cake base, cover with the second one. Top with the rest of the oreo-cream. Refrigerate until serving. Before serving decorate the cake with strawberries and the rest of the oreos.
