Kakao Bailey's'ega / Hot Chocolate with Baileys

Minu viimase aja lemmikjoogiks on kujunenud mõru, kreemjas ja parajalt magus kakao Bailey's likööriga. Klaas kuuma jooki sobib ideaalselt enda ülessoojendamiseks või koogi asemel magustoiduks.

Valmistamisviis on ülilihtne, mina panen kõike tunde järgi. Vahest tahaks magusamat, vahest mõrumat kakaod. Siiski mõõtsin üleskirjutamiseks kogused ära, neid järgides saab palju vähem magusa ja kange joogi, kui näiteks Amsterdami kuulsas The Pancake Bakery's, kus seda esimest korda proovisin.

Kindlasti tasub katsetada erinevate Bailey's likööridega, piparmündimaitseline tundub eriti ahvatlev.

Vaja läheb (ühele):
200 ml piima
2 tl mõrudat kakaopulbrit
1/2 tl mett (või 1 tl suhkrut)
1/2 dl Bailey's likööri

vahukoort
veidi kakaopulbrit

PS. Kuna mesi kaotab suure osa oma kasulikest ainetest ja ensüümidest kuumutades, tasub see lisada kõige lõpus.

PS II. Proovi ka kohviga (:

--------------------------------------------

My recent indulgence is slightly bitter, but still sweet and creamy hot chocolate with Bailey's. A cup of hot cacao is excellent to warm oneself up or as dessert.

Making this couldn't be simper, I never bother measuring out the quantities as sometimes I feel like having a sweeter drink and sometimes like a bitter one. I measured out the ingredients to write them up - this will make a less sweet and strong hot chocolate than the one they serve in the famous Pancake Bakery in Amsterdam, where I first had the drink.

It is worth having a try with the different Bailey's flavours, mint seems like an interesting one to me.

You'll need (for one):
200 ml milk
2 tsp dark cocoa powder
1/2 tsp honey (or 1 tsp sugar)
1/2 dl Bailey's

whipped cream
cocoa powder

Warm the milk in a saucepan on medium-high heat. Add the cocoa and sugar, if not using the honey, stir. Heat, stirring occasionally, until boiling. Turn off the heat, add the Bailey's and honey. Pour into a glass and serve with whipped cream decorated with cocoa powder.

PS. Honey looses a lot of it's beneficial nutrients and enzymes when heated which is why it should be added in the very end.

PS II. Try this with coffee (:

Purukattega banaanimuffnid / Banana Crumb Muffins

190 g nisujahu
1 tl soodat
1 tl küpsetuspulbrit
1/2 tl soola
1 tl kaneeli
1/2 tl jahvatatud muskaatpähklit (soovi korral)
1/2 tl ingveripulbrit (soovi korral)
3 küpset banaani (+ sidrunimahla)
150 g (pruuni) suhkrut
1 muna
75 g sulavõid

Purukate:
2 spl nisujahu
75 g (pruuni) suhkrut
1/2 tl kaneeli
15 g võid

Pane ahi 190 kraadi juurde sooja.

As I have previously mentioned there is a tradition in our school for students to bring cake to certain lessons, especially those where more thinking is required, such as advanced maths or biology. Not that my advanced English requires too much cognitive activity - we watch movies or read books. Last week it was my turn to bring breakfast to the class and what would go better with coffee than banana muffins, I figured.

The much praised recipe is from allrecipes.com and the muffins lived up to their reputation. I was impressed by how much they rose. As a precaution, the muffins turned a darker, browner hue overnight so to improve the visual aspect one could add some lemon juice to the smashed banana. What's more, the original recipe calls for brown sugar for the crumble, but that knocks off points from the appearance as well. Thus, I used refined sugar for the crumble and hid the brown one inside the muffins.

You'll need (12 muffins):
190 g all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground nutmeg (may be omitted)
1/2 tsp ground ginger (may be omitted)
3 ripe bananas (+ lemon juice)
150 g (brown) sugar
1 egg
75 g melted butter

Crumble topping:
2 tbsp all-purpose flour
75 g (brown) sugar
1/2 tsp cinnamon
15 g butter

Preheat the oven to 190 degrees. In a large bowl, mix together the flour, baking soda, baking powder, salt, cinnamon and, if using, the nutmeg and ground ginger. Smash the bananas using a fork, add some lemon juice, if you wish. In another bowl, beat together smashed bananas, 150 g (brown) sugar, egg and melted butter. Stir the smashed banana mixture into the flour mixture just until moistened. Spoon the batter into prepared muffin tins and bake at 190 degrees for 5 minutes or until the muffins are beginning to solidify.

At the same time mix together the (brown) sugar, flour and cinnamon. Cut in the butter until the mixture resembles coarse meal. Sprinkle topping over muffins and bake for another 15-20 minutes or until a wodden toothpick inserted into the middle of a cake comes out clean. Best with coffee.

Suvikõrvitsa-läätse püreesupp / Courgette-Lentil Soup

Ilmade jahenedes tekib ikka soov mõnusa sooja supi järele, mida on mõnus dekadentlike võileibade kõrvale süüa.

1 sibul
1 küüslauguküüs
1 tl tüümianilehti
600 ml köögiviljapuljongit
350 g suvikõrvitsat
150 g spargelkapsast või varssellerit
soola
pipart

Keeda läätsi ligikaudu viisteist minutit ehk seni, kuni nad on pehmed, kuid mitte katki. Keeda umbes 10 minutit - kuni köögiviljad on pehmed. Püreesta koos läätsedega, maitsesta soola-pipraga. Soovi korral serveeri koore või riivjuustuga.

As the weather gets colder I start craving for hot soups that go so well with filling, decadent sandwiches. Soups that contain only vegetables, no added cream or fats usually taste plain, however, the lentils in this one give a silken texture when puréed so there is no actual need for cream or cheese to be added.

You'll need:
1 dl De Puy lentils
butter
1 onion
1 glove of garlic
1 tsp of thyme leaves
600 ml vegetable broth
350 g courgette
150 g broccoli or celery stalks
salt
pepper

Boil the lentils for about 15 minutes or until they are soft but not porridge like. Drain and rinse under running water. Peel the onion and garlic, cut them into fours and fry, with the thyme leaves, until golden in a medium saucepan. Cut the courgette and broccoli into rough cubes (about 5 x 5 cm) and add to the saucepan with the broth. Boil until the vegetables are tender. Purée with the lentils, add salt and pepper to taste. Serve with cream or grated cheese if you wish.

,,See kook" / "That Cake"

Meie peres on nii, et ilma igasuguse kokkuleppe ega seletuseta tähendab ,,See Kook" Vilma, kas Juubeli või Eerika, pulbriga tehtud kohupiima-purukooki. Retsept on endine, imelihtne ja pähekulunud. See kord kasutasin Juubelitordipulbrit, pohli ja panin purukattesse supilusikatäie kaneeli. Tulem oli üle ootuste hea.

In our family "That Cake" stands for this fromage frais and crumble cake and no more explanation is needed. This time I used plain, yellow cake mixture (Juubelitordipulber), lingonberries and put a tablespoonful of cinnamon into the crumble topping. The result was surprisingly good. The recipe is the same as always.

Domino tort / Oreo Cake

Biskviitkihid:
50 g tumedat kakaod
75 g fariinsuhkrut
250 ml keevat vett
225 g nisujahu (millest poole võib täisteranisujahuga asendada)
1/2 tl küpsetuspulber
1/2 tl soodat
125 g toasooja võid (millest poole võib õunakastmega asendada)
125 g suhkrut
2 tl vanilliekstrakti
2 muna

Täidis-kreem:
200 ml vahukoort
300 g toorjuustu
1 dl tuhksuhkrut
2 tl vanillisuhkrut
1 pakk ehk 8 g vahukoorestabilisaatorit
175 g domino või oreo küpsiseid

Kaunistuseks:
8 domino või oreo küpsist (a la 80 g)
8 suurt maasikat

Kõige mõtekam on kook laduda serveerimistaldrikule. Aseta ühele biskviitpõhjale pool kreemist, tõsta peale teine põhi ning kata kreemiga. Hoia tort serveerimiseni külmas. Enne sööma asumist kaunista maasikate ning hakitud küpsistega.

Biskviitpõhjade retsept, mugandatud: Nigella.com

I baked this cake for my brother's 16th birthday which is on the first day of Autumn. The birthday child asked for something, anything with oreos and this decadent-looking yet quite easy to make cake seemed appropriate for the occasion. Both my brother and the quests were very pleased with it, I was also quite positively surprised with the outcome.

You may also use Dominos, the Finnish equivalent to Oreos.

You'll need:

For the cake layers:
50 g best-quality cocoa powder, sifted
75 g dark muscovado sugar
250 ml boiling water
225 g plain flour (half of which could be substituted for whole grain flour)
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
125 g soft unsalted butter (half of which can be substituted with apple sauce)
125 g caster sugar
2 teaspoons vanilla extract
2 eggs

For the cream:
200 ml double cream
300 g cream cheese
1 dl caster sugar
2 tl vanilla sugar
1 sachet (8 g) of whip cream stabiliser
175 g oreo or domino bisquits

For decoration:
8 domino or oreo bisquits (a la 80 g)
8 big strawberries

Preheat the oven to 180 degrees.Line the bottoms of two springforms (mine were 24 cm, the recipe calls for 20) with parchment paper and butter the sides.

Whisk to mix the cocoa, muscovado sugar and boiling water, set aside. Stir the flour, baking powder and baking soda together in another bowl, set aside.

Cream the butter and caster sugar together, beating well until pale and fluffy. Beat in the apple sauce, if using. Dribble the vanilla extract into the butter-sugar mixture, mixing all the while, then drop in 1 egg, quickly followed by a scoopful of flour mixture, then the second egg.
Keep mixing and incorporate the rest of the dried ingredients for the cake, then finally mix and fold in the cocoa mixture, making sure not to leave in any lumps.

Divide the batter between the two prepared springforms and bake for about 30 minutes or until a cake tester comes out clean. Let the cakes cool completely before layering with the cream.

To make the filling whisk the double cream, add the rest of the ingredients and whisk until soft peaks appear. Stir in the chopped bisquits.

It's best to layer the cake on the plate you are going to serve it on. Spread half of the cream filling on one cake base, cover with the second one. Top with the rest of the oreo-cream. Refrigerate until serving. Before serving decorate the cake with strawberries and the rest of the oreos.

Riisinuudli salat brokoli ja vürtsika tofuga / Rice Noodle Salad with Broccoli and Spicy Tofu

225 g extra-firm (suitsutatud) tofut vees
2 spl toiduõli
2 spl sojakastet
1/2 - 1 tl harissat (vastavalt taluvusele)
170 g riisinuudleid
225 g brokoliõisikuid
3 spl riisiveiniäädikat
1 tl värsket riivitud ingverit
1 tl tumedat seesamiseemneõli
2 jämedalt riivitud porgandit
5 suuremat redist
2 spl röstitud India pähkleid

Lõika tofu umbes kahe sentimeetristeks kuubikuteks ja aseta ükshaaval paksule majapidamispaberile või neljale-viiele üksteise peale asetatud majapidamispaberi tükile. Kata 4-5 majapidamispaberi lehega, kõige peale tõsta midagi rasket, näiteks keraamiline ahjuvorm, nii et see toetub kõigile tofu tükkidele. Lase 15 minutit seista.

Pane ahi 175 kraadi juurde sooja. Vispelda omavahel toiduõli, sojakaste, 1/2 tl harissat. Lisa tofu, sega ja lase 15 minutit maitsestuda. Aseta tofu tükid küpsetuspaberiga kaetud ahjuplaadile, jäta marinaad alles, ja küpseta 175 kraadi juures 10 minutit.

Keeda nuudlid vastavalt juhendile, pese külma vee all ning nõruta. Keeda või auruta brokol, jahuta külma vee all.

Lisa kõrvale pandud marinaadile ülejäänud harissa, riisiveiniäädikas, ingver ja seesamiõli, vispelda. Lisa nuudlid ja sega, seejärel lisa tofu, brokol, riivitud porgand ja õhukesteks ratasteks (näiteks juustunoaga) lõigatud redised. Sega ning serveeri röstitud India pähklitega.

So far, my experiments with tofu haven't been that great. The results have been either rubber-like or tasteless. Indeed, it's quite easy to ruin tofu if you don't know the right methods.

This time however, I had picked out a recipe with tofu included but due to the lack of choice at the store had to settle for smoked tofu. Even though my suspicions were great, the result was impressive. Even my highly skeptical mother, who finds tofu, soy and other meat-substitutes meaningless, was positively surprised.

This spicy salad was light but filling yet quite different to my everyday menu.

You'll need:
225 g extra-firm (smoked) tofu in water
2 tbsp cooking-oil
2 tbsp soy sauce
1/2 - 1 tsp harissa (depending on your taste)
170 g rice noodles
225 g broccoli (head only)
3 tbsp rice wine vinegar
1 tsp fresh grated ginger
1 tsp darm sesame oil
2 coarsely grated carrots
5 medium-large radishes
2 tbsp toasted cashew nuts

Cut the tofu into 2 cm cubes and place on several layers of paper towels, cover with additional paper towels. Place something heavy such as a heavy baking pan on top of the cubes to apply pressure. Let stand for 15 minutes.

Preheat the oven to 175 degrees. Whisk together the cooking-oil, soy sauce, 1/2 tsp harissa. Add the tofu cubes, toss to combine and let marinate for 15 minutes. Arrange the tofu on a single layer on a lined baking sheet and bake at 175 for 10 minutes or until lightly golden. Reserve the marinate.

Boil the noodles according to package instructions. Drain and rinse with cold water, drain well.
Boil or steam the broccoli until crisp-tender. Rinse with cold water and drain.

Cut the radishes into thin slices, you may want to do this with a cheese cutter. Add the remaining harissa, rice wine vinegar, ginger and sesame oil to the reserved marinade, whisk. Stir in the noodles, as well as the tofu, broccoli, grated carrots and radishes. Sprinkle with cashews.

Ploomi-mandlikook amarettoga / Plum and Almond Cake with Amaretto

Vastupidi. Minu maja vastas, kuid siiski pisavalt kaugel naabrite valvsatest pilkudest, on uhke ploomivõsa.

190 g jahu (millest soovi korral 95 g täisteranisujahu)
näpuotsatäis soola
50 g suhkrut
80 g külma võid
1 muna

Täidis:
50 g toasooja võid
40 g suhkrut
50 g kondenspiima
1 muna
90 g jahvatatud mandleid
2 spl (täisteranisu)jahu
2 tl kaneeli
1/2 dl amarettot
umbes pool kilo magusaid ploome

Purukate:
4 spl pehmet võid
1 dl suhkur
1 dl jahu

We don't have an apple tree here in Luxembourg. Nor a plum tree. In truth the only edible thing growing in our garden is peppermint, although we do have a blackcurrant tree lingering between life and death. There is no tradition to grow one's own food in this country and, well, history certainly plays a role here too. Unbelievable to an Estonian but picking more than a kilo of mushrooms from a forest is a robbery! Thus it's the growing and harvesting, the do it yourself lifestyle, so common to Estonians, that I miss in this country.

Hardly anyone here has a plum tree in their garden but that doesn't mean there aren't any at all. Indeed, across the field opposite to my house are huge wild plum trees, surrounded by prickly wild roses...

Who cares about the one kilo rule, okay law, and broken hands, we brought home 10 kilos of plums!

The next stage was to find the best plum cake recipes and try to use all the fruit up before they go bad. The first recipe I'll post is the winner of our plum marathon - an almond - amaretto cake with crumble topping.

You'll need:

Bottom:
190 g flour (of which 95 g can be whole grain)
pinch of salt
50 g sugar
80 g cold butter, cut into cubes
1 egg

Filling:
50 g soft butter
40 g sugar
50 g condensed, sweetened milk
1 egg
90 g almond meal
2 tbsp (whole wheat) flour
2 tsp cinnamon
1/2 dl amaretto
about 1/2 kilo sweet plums

Topping:
4 tbsp soft butter
1 dl sugar
1 dl flour

For the pâte sablée base incorporate the flour, salt and sugar. Add the butter and either pick the dough with your finger until it resembles crumble or chop the butter into the dry ingredients with a knife. Whisk the egg sightly to integrate the yolk with the white and add to the flour-butter mixture. Wrap the dough into film and refrigerate for 30 minutes. Line a prepared springform (26 cm) with the dough and using a fork make a few holes into the pastry. Cover the pastry base with foil or parchment paper and fill the springform with dried beans, peas or special ceramic balls. Refrigerate the pastry until baking.

For the filling whisk the soft butter with the sugar, add the condensed milk and egg, while whisking. Stir in the almond meal, flour, cinnamon and amaretto. Cut the plums into halves or smaller depending on their size, remove the pits.

Bake the base at 200 degrees for 10 minutes, remove the beans/peas/ceramic balls and foil and bake for another 5 minutes. Pour the filling on top of the base and neatly cover with the plums. For the topping, work the flour, sugar and butter into crumble and sprinkle on top of the plums. Bake at 200 degrees for 25-30 minutes. Serve with vanilla ice cream or sauce.

Pohla-toorjuustukook / Lingonberry Cheesecake

Juba augusti lõpus sai ristiisa külaskäigu puhul tuliuuest Nami-Nami kokaraamatust tehtud pohla-toorjuustukooki. Algul võõrana näiv kombinatsioon toorjuustust, pohladest ja liivatainast osutus üle ootuste maitsvaks, järgmisel pohlauputusel teen kooki kindlasti veel.

Retsepti leiab nii Nami-Nami kokaraamatust kui kodulehelt. Mina asendasin poole nisujahust täisteranisujahuga ja toorjuustu vahustasin enne teiste ainete lisamist üksinda kohevaks.

I made this cake already at the end of August when my godfather and his wife payed us a visit on the countryside. I was slightly suspicious of the possible outcomes of lingonberries, cream cheese and pate sablée in a cheese cake but the result was surprisingly good. I will definitely make this cake again on the next lingonberry overload.

You'll need:

Base:
100 g butter, at room temperature
85 g sugar (1 dl)
1 large egg
175 g all-purpose flour (about 3 dl) (I substituted 1.5 dl with whole wheat)
0.5 tsp baking powder
pinch of salt

Filling:
600 g cream cheese
100 g sugar (just over 1 dl)
3 large eggs
1 tsp vanilla extract
peel of 1/2 orange

Topping:
100 g lingonberries

For the base whisk the butter and sugar, add the egg. Incorporate the dry ingredients and add to the sugar-egg mixture. Cover the sides and base of a prepared 26 cm springform (about 3 cm high on the sides). Place the springform in a fridge while making the filling.

Whisk the cream cheese by itself, then incorporate with the rest of the ingredients. Pour the filling on top of the base and cover with the lingonberries. Bake at 180 degrees for about 45 minutes, until the filling is almost solid. Let cool completely before serving.

See kook sarnaneb väga ameerikalikule porgandikoogile. Lihtne ja maitsev, eriti teega. Nagu selliste kookide puhul ikka läheb see seistes ainult paremaks.

Vaja läheb:
2.5 dl täisteranisujahu
2.5 dl nisujahu
1 tl kaneeli
1/2 tl riivitud muskaatpähklit
2 tl soodat
1 tl soola
1/4 tl küpsetuspulbrit
1 tl vanilliekstrakti või -suhkrut
3 muna
2 dl fariinisuhkrut
2.5 dl suhkrut
1 tl sidrunikoort
4.5-5 dl riivitud ja nõrutatud suvikõrvitsat* (minul kulus kaks keskmist suvikõrvitsat)
2 dl hakitud kreeka pähkleid
1 dl kuldseid rosinaid (soovi korral)

Katteks:
150 g toorjuustu
2-3 spl kondenspiima
1/2-1 tl sidrunikoort

*Enne suvikõrvitsa mõõtmist pigista sellest võimalikult palju vett sõela kohal välja.

Pane ahi 175 kraadi juurde sooja.

Sega hulka (kolmes osas) jahusegu. Lisa ka suvikõrvits ja pähklid-rosinad, sega.

Vala tainas ettevalmistatud ahjuvormi, küpseta 175 kraadi juures 40-45 mintit ehk seni kuni koogi keskosasse surutud puutikk jääb puhtaks. (Mina kasutasin väiksemaid vorme, koogid küpsesid 25 minutit). Enne katte lisamist lase koogil täielikult jahtuda.

Katte jaoks sega omavahel toorjuust, kondenspiim ja sidrunikoor. Mina panin kondenspiima silma ja maitse järgi, kuid kate võiks olla pigem kontrastiks magusale koogile kui lääge võõp.

As can be seen in food markets, stores, the countryside and on the internet the zucchini/courgette season is full on. This cake is actually quite similar to carrot cake. Easy to make but tasty, a perfect dessert with tea. And just like other similar cakes, it only gets better with time. I found the cake the best 2 days after baking, not that I got to try it any later.

You'll need:
2.5 dl whole wheat flour
2.5 dl all-purpose flour
1 tsp cinnamon
1/2 tsp grated nutmeg
2 tsp baking soda
1 tsp salt
1/4 tsp baking powder
1 tsp vanilla sugar or essence
3 eggs
2 dl brown sugar
2.5 dl granulated, white sugar
1.5 dl apple sauce (may be substituted for butter or vegetable oil
1/2 dl melted butter or vegetable oil
1 tsp lemon zest
4.5-5 dl grated courgette* (I used 2 medium sized courgettes)
2 dl chopped walnuts
1 dl golden raisins (optional)

For the frosting:
150 g cream cheese
1/2- 1 tsp lemon zest
2-3 tbsp condensed milk

*Before measuring the grated courgette place it in a sieve and press out some of the excess moisture.
Preheat the oven to 175 degrees C. Prepare a squared (23x30 cm) non-stick pan by covering it with butter. I used smaller tins and baked

Chop and toast the nuts. Set aside. Whisk together the flours, cinnamon, grated nutmeg, soda, salt and baking powder. If you're using vanilla sugar then add that too.

In another bowl whisk the eggs until light and fluffy. Add the sugars, apple sauce, melted butter, lemon zest and vanilla essence, if using. In three parts, stir in the flour mixture. Add the grated courgette, toasted walnuts and raisins, if using.

Pour the batter into the prepared pan and bake at 175 C for 40-45 minutes or until a wooden toothpick inserted into the centre of the cake comes out clean. (I used smaller cake tins and baked mine for about 25 minutes). Let cool before covering with the frosting.

For the frosting, incorporate the cream cheese, lemon zest and condensed milk. I didn't measure the condensed milk but tasted the frosting while adding it bit by bit. You'd want a mixture that isn't too sweet but a nice contrast to the cake.

300 g magusat kondenspiima
50 g tumedat šokolaadi (mitte alla 65% kakaod)
3-5 sl hakitud värsket piparmünti

Vahusta koor tugevaks vahuks, lisa kondenspiim, vahusta kuni ained on segunenud.

So far it seemed to me like homemade ice cream was something I was never going to make as I don't own such a machine with superpowers. That's the reason I never even bothered looking into homemade ice cream recipes. But after this recipe started appearing in numerous food blogs I bothered reading it through. It doesn't require a magician's powers, just a whisk, even a mechanical one would do. The ice cream tasted delicious, partially thanks to the heavy cream, even though the peppermint and dark chocolate combination never lets one down.

I used 4 tablespoonfuls of chopped peppermint leaves, next time I'll go with 5. I would actually have liked if the chocolate had been crunchy under the tooth, so next time I'll chop half of it instead of grating it.

You'll need:
6 dl heavy cream
300 g sweetened condensed milk
50 g dark chocolate (min 65% cocoa)
3-5 tablespoonfuls of fresh peppermint leaves

Whisk the cream until stiff and firm, add the condensed milk and whisk until combined. Chop or grate the dark chocolate (very big chunks are likely to fall to the bottom of the ice cream while freezing) and add to the cream along with the chopped peppermint. Freeze for a minimum of 5 hours. I've heard that homemade ice cream doesn't keep well, so there is no point in making a whole batch ahead for the winter.

Maasika toorjuustukoogid iirisega / Strawberry Cheesecakes with Toffee

Vabaduse väljaku servas asuvas kohvik-restoran-lounge'is Mosaiik pakutakse suussulavat laimi toorjuustukooki just sellistes purkides.

70 g pehmeid iiriseid
3 spl piima
umbes 100 g muredaid küpsiseid
150 ml rõõska koort (35%)
250 g toorjuustu (tunnistan, et kasutasin lahjat)
5 spl tuhksuhkrut
1/2 spl vanillisuhkrut
umbes 250 g maasikaid

Sulata iirised potis pidevalt segades piimaga. Serveeri hapude marjadega.

Inspiratsioon: juuni 2011 Oma Maitse, mis kadus mul ära, seega võtsin retsepti Kokkamine blogist.

There is a cafe-restaurant-lounge in the center of Tallinn called Mosaiik. There they serve a delicious lime cheesecake in cute jars like these and the moment I saw them I knew I had to purchase them. They are so cute! As well as practical, as 200 ml is just the right amount of cheesecake for one. Meanwhile, when these jars are not filled with cake (don't worry they wont be for long) you can use them to store and exhibit various seeds and nuts.

Another positive thing about these jars is that you can make all the cheesecakes that require gelatin without using the stuff. Maybe this is not as important to everyone as it is to me, but after I found out where gelatin comes from I have tried to ignore it. And well, I haven't bothered looking into agar-agar.

This is enough reasons to buy these jars, right? Convinced myself at least. I bought mine from Prisma in Kristiine keskus in Tallinn.

Oh, about the strawberries. Do try to get real stuff, the Spanish ones are nothing compared to home grown ones. About the cakes too. The fudgy biscuits were so good, they passed the "quality test" with major casualties. I am definitely going to use that idea for other cheesecakes too. The cream cheese layer was nice and creamy, although I expected something a little more spectacular from the cake. But everyone else loved them and now my little brother keeps asking for cake in "those jars".

You'll need:
5 x 200 ml jars or glasses

70 g soft plain toffee or fudge (cut into cubes)
3 tbsp milk
about 100 g biscuits (such as Digestives)
150 ml double cream (35%)
250 g cream cheese (I confess, I used light)
5 tbsp confectioner's sugar
1/2 tbsp vanilla sugar
about 250 g strawberries

Stirring vigorously, melt the fudge with milk on medium-high heat. Crush the biscuits and mix with 2/3 of the melted fudge. Whisk the double cream and integrate with the cream cheese and sugars. Cut the strawberries into pieces. Layer the biscuits, cream cheese and strawberries one after another in the jars. Top with the remaining melted fudge. If it has solidified by that time, just add a tablespoonful of milk and melt it. Serve with sour berries.

Inspired by June 2011 Oma Maitse that I lost, so I took the recipe from here.

Pestoga sarvesaiad / Pesto Croissants

100 g nisujahu
140 g täistera rukkijahu
100 g riivitud juustu (kasutasin lahjat)
2 tl küpsetuspulbrit
0,5 tl meresoola
50 g pehmet võid
200 g hapukoort

Täidis:
100 g riivjuustu
paar kuhjaga supilusikatäit pestot

Peale:
pestot

Stinging nettle pesto gives these healthy croissants a twist but any pesto will do. They are great with light salads and soups or with tomato and mozzarella for breakfast. The whole grain rye flour can be substituted for all-purpose or whole wheat flour.

You'll need:
100 g all-purpose flour
140 g whole grain rye flour
100 g grated cheese (I used light)
2 tsp baking powder
0,5 tsp (sea) salt
50 g butter, at room temp
200 g sour cream or 10-20% crème fraiche

Filling:
100 g grated cheese
a few tablespoonfuls of pesto

Topping:
pesto
cumin seeds

Sift together the flours, grated cheese, baking powder and salt. With your fingers rub in the soft butter and stir in the sour cream or crème fraiche until combined. Roll the dough out into a thin circle, brush with some pesto to get an even light-green pastry. Cut the pastry into 12 sectors and cover with the cheese. Make sure to place more grated cheese on the wider edges of the sectors than the rest. Gently press some of the cheese into the pastry and, starting from the wider edges, roll the sectors into rolls. Place the croissants on a prepared baking sheet and brush with pesto, top with some cumin seeds. Bake at 225 for about 20 minutes.

Rabarbrikook kondenspiima ja beseekattega / Rhubarb Cake with Condensed Milk and Meringue

Jah, ma tean, rabarbrihooaeg on juba ammu kinni kuulutatud.

I am fully aware that the rhubarb season is over or ending, in Europe at least. A few weeks ago, however, my neighbour, who had plenty in her garden, and probably still does, gave me a generous bunch of stalks. I was overwhelmed, because the new mower guy had not even noticed our rhubarb bush and ran over them all. Well, you can't blame him, as the grass was so high at the countryside, he couldn't even tell something had been planted there. So that was that with my rhubarb. With a few recipes in mind, I didn't want to turn what had been given by my neighbour into jam, so I froze it.

This recipe caught my eye the first time I saw it and I promised myself I would try it out this rhubarb season. Those who have already frozen the last of their rhubarb should keep this recipe in mind or in their bookmarks and use the precious stuff during winter for this cake, as it's really worth it. The condensed milk layer was exceptionally delicious :)

The recipe is from this Estonian food blog. She does actually have two recipes in English too, both hits.

This cake is for a bigger springform or pan, half the size of a baking sheet. I made it in a 24 cm springform and had some batter left over that I used to make 3 individual cakes in muffin tins. The end result was quite sweet, so next time I will probably reduce the amount of sugar in the base as well as the butter.

You'll need:

Base
3 dl flour (I used 1.5 dl whole wheat - worked just fine)
1 tsp baking powder
150 g butter, at room temp
1,5 dl sugar
1/4 tsp salt
1 egg

Filling
3 egg yolks
400 g sweetened condensed milk
1 dl sour cream or 10-20% crème fraiche
350-400 g chopped rhubarb

Meringue topping
3 egg whites
1.5 dl sugar

For the base, Integrate the flour and baking powder. Whisk the butter and sugar until light yellow and creamy. Add the salt, egg and flour-baking powder mixture. Spread the batter on a prepared baking sheet or springform. Make sure the edges of your baking sheet are at least 3 cm high to avoid spilling. Bake at 200 degrees for 10 minutes. Take the cake out and reduce the temperature of the oven to 180 degrees C.

For the filling, whisk the egg yolks and mix with the condensed milk and sour cream. Combine with the rhubarb. Pour on top of the base and bake at 180 degrees for 30 minutes. (Mine was still very runny after 30 minutes so I baked it for 45 minutes, until solid but tender). Take the cake out of the oven but leave it on.

For the topping, whisk the egg whites with the sugar until solid. Add the sugar to the egg in three parts during whisking. Spread on top of the cake and bake at 180 derees for another 10 minutes or until the meringue starts turning golden.

Let cool and cut with a wet knife, this way you won't break the meringue.

Läätse-köögiviljapada / Lentil and Vegetable One Pot Meal

Eelmine kord kui ma sellerit ostsin jäi see pärast ühel korral kasutamist juurviljakaussi seisma. Sealt edasi lendas see prügikasti. Tegu on õnnestunud leiuga.

Retsept on Pille Endeni raamatust ,,Pajaroad". Mulle jäi ebaselgeks, mida oli mõeldud ,,karri" all, kas pulbrit või pastat. Kasutasin veskis maitseainet, mille peale oli kirjutud ,,Curry mühle", see sisaldas safranit, koriandrit, sinepiseemneid, köömneid ja ingverit ning fenugreek'i, mille nime ma eesti keeles tuvastada ei suutnud. Panin seda umbes 2 supilusikatäit.

Vaja läheb (neljale):
2 sibulat
2 küüslauguküünt
3 porgandit
3 sellerivart
1 sl õli
3 sl karrit
6 dl köögiviljapuljongit
1 purk ehk 400 g purustatud tomateid
2 dl punaseid läätsi
1 sidruni mahl
soola ja musta pipart

Koori ja haki sibulad ning küüslauguküüned. Koori porgandid ja lõika kuubikuteks. Viiluta sellerivarred. Hauta nõrgal kuumusel aeg-ajalt segades kaane all 20-25 minutit. Maitsesta sidrunimahla, soola ja pipraga.

------------------------------------------------------------

The last time I bought celery, I used it once in a recipe that called for it and then it just stood/waited on the counter until it was time to throw it away. I am not used to eating celery, I admit, and I don't know many things you can make out of it. This time, recalling the memories of what had happened with the previous celery, I looked up a recipe to save it. This was the first one I found but it seemed to beat all the ones that came after. And the result was surprisingly good. The slightly Far Eastern dish can be eaten all by itself or with rice and meat.

I am not exactly sure what is meant by "curry", whether it's powder, paste or some other from of the spice mix. I used about two tablespoonfuls of a spice mixture that had "curry mühle" written on and contained turmeric, fenugreek, coriander seeds, mustard seeds, cumin and ginger.

You'll need (serves 4):
2 onions
2 gloves of garlic
3 carrots
3 celery stalks
1 tbsp oil
3 tbsp curry
6 dl vegetable stock
1 can ergo 400 g tomato purée
2 dl red lentils
juice of one lemon
salt and pepper

Peel and chop the onions and garlic. Peel the carrots and cut into cubes. Cut the celery stalks into about 3/4 cm long cubes. Heat the oil in a large saucepan. Add the onions and garlic and heat for a few minutes. Add the carrots, celery and curry, stir. Pour the vegetable stock, tomato purée and lentils
on the vegetables. Bring to boil, then reduce the heat and simmer for 20-25 minutes. Season with lemon juice and some salt and pepper.

Kiire keefiri asendaja / Quick Buttermilk Substitute

Ega siin midagi keerulist pole. Vaja läheb:
pool liitrit piima

I hardly have buttermilk at home and the previous time I wanted to make the seed and dried fruit bread I had all the ingredients except buttermilk. I wouldn't be bothered to go to the store just for one thing so I looked up a quick substitution. The bread turned out just like when using buttermilk so I decided to share this "recipe" in case someone ever needs a quick substitute.

Even though an excellent replacement for baking, this buttermilk is not exactly the same for drinking as it's more liquidly.

Nothing difficult, you only need:
half a liter of milk
two tablespoonfuls of lemon juice or vinegar

Pour the lemon juice or vinegar into a measuring cup and add the milk. Stir. Before baking let stand for five to ten minutes. Use just like buttermilk even though as it's more liquidly you might want to use a few spoonfuls more flour.

Mustika ja valge šokolaadi muffinid / Blueberry and White Chocolate Muffins

Allikas: Hea toit, parem elu. Nagu seal märgitud, võib mustikad asendada jõhvikatega ja sel juhul sidruni koor apelsini omaga. Siis tasub kasutada ka 200 g šokolaadi.

Vaja läheb (12 tk):
100 g sulavõid
200 ml petti
1 sidruni riivitud koor (soovi korral, aga soovitan soojalt)
250 g jahu
1,5 tl küpsetuspulbrit
noaotsatäis (1/4 tl) soola
noaotsatäis (1/4 tl) söögisoodat
2 suurt muna

On the site where I found the recipe for "the World's Best Rhubarb Muffins" I also found a link to these. I had seen the recipe before but not given it much thought. At a second inspection at the ingredients I decided to try them out. I had used white chocolate in a cottage and cream cheese cake and that had turned out a success. And I knew from before that lemon peel and blueberries work really well together.

As I expected, these were delicious, moist and soft. Mine were slightly crispy on top, which gave them the soft and crunchy contrast, something I don't seem to grow tired of. The white chocolate is alluring, combined with the batter, it turns the texture almost silky. I personally liked the muffins best when they were still a little warm as the white chocolate hadn't solidified yet.

Source: Hea toit, parem elu. As suggested there, these can also be made with cranberries. In that case substitute the lemon peel for orange peel and use 200 g of white chocolate.

You'll need (for 12):
100 g melted butter
200 ml buttermilk
peel of one lemon (optional, but I strongly recommend)
250 g all-purpose flour
1.5 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
2 large eggs
150 g caster sugar (120 g was fine too, perhaps even better if using sweet blueberries)
250 g (frozen) blueberries or cranberries
100-200 g white chocolate, chopped into chocolate chip size pieces

Incorporate the butter, buttermilk and lemon peel. In a separate bowl whisk the flour, baking powder, salt and baking soda. In another separate bowl whisk the eggs and sugar. Add the egg mixture to the buttermilk one and whisk. Gently stir in the flour mixture, just until combined. Stir in the blueberries and white chocolate (I used 100 g). If you are using frozen berries, don't melt them before, as they'll colour the batter blue. Divide the batter between 12 lined muffin tins and bake at 190 degrees C for 20-25 minutes until the muffins are golden brown.

Seemne- ja puuviljaleivad / Breads with Seeds and Dried Fruit

Igal juhul on see parim juuretiseta leib, mis mina saanud olen.

1/2 l keefirit
1 tl soodat
175 g tumedat siirupit (kasutasin maltoosa)
1-2 dl pähkelid ja seemneid (kasutasin pistaatsia pähkleid, päevalilleseemneid, linaseemneid ja mandleid)
1 banaan

As you might have noticed, traditional Estonian bread is made of whole grain rye flour using sourdough. You may of may not be aware that sourdough is quite a petulant... thing? being? Estonians talk about it as a living being, because, well, it is. We call it the mother-starter (don't laugh) or the starter's son. She needs the right temperature to rise, which can't be too high or too low, as in the worst case you'll just end up killing her. This is the reason why they used to even bring the dough to bed to keep it warm during harsh times. They say you should talk to her, feed her and never bake bread when in a bad mood. This might explain why, at first, I avoided making sourdough bread. I had no reason to as I had a great recipe that used no sourdough but tasted, well, addictive. My first breads were made with this recipe. I already managed to forget how easy it can be to make bread after having adapted to the starter's moods. This bread is so good, I was considering calling it the best non-sourdough bread but though maybe that's too provocative. Although it is the best non-sourdough bread I have ever had and you can always be sure that it will turn out great as the mother-starter is not pissed off.

I have made this bread both sweet and salty. The sweet one is almost like dessert as it's packed with dried fruit and nuts. I like to eat it with goat cheese spread even though it's amazing by itself too. The second version is salty with lots of seeds and different whole grains.

For the SWEET VERSION you'll need (makes one loaf):
1/2 l buttermilk or "kefir"
1 tsp soda
175 g dark syrup (I used maltose)
2 dl seeds or nuts (I used pistachios , sunflower seeds, linseeds and almonds)
1 banana
400 g flour (I used whole grain rye and wheat flour as well as some amaranth flour)
1 tsp salt
1-2 dl dried fruit, cut into pieces (All together I used 2 dl dried figs, goji berries and blueberries)

Mix the buttermilk, soda and syrup. Toast the seeds and nuts and mash the banana with a fork or potato masher. Add both to the buttermilk-syrup mixture as well as the rest of the ingredients. Prepare a loaf pan with non-stick spray or butter and line with parchment paper, allowing an overhang on the sides. Pour the batter into the loaf pan and bake at 175 degrees C for 1.5 hours. Let cool. May be served warm, even though it is quite sticky at that stage.

For the SALTY VERSION you'll need (one loaf):
1/2 l buttermilk or "kefir"
1 tsp soda
100 dark or bread syrup or maltose
2-5 tsp cumin seeds
1/2-2 dl seeds or nuts (I have used sunflower, cannabis, pumpkin and linseeds)
70 g old fashioned oats (may be replaced by flour)
30 g wheat germ (may be replaced by flour)
4 tsp milled coriander
300 g flour (I use half whole grain rye and half wheat flour)
1 tsp salt

Mix the buttermilk, soda and syrup. Toast the seeds and nuts as well as the old fashioned oats, wheat germ and cumin seeds. Integrate them to the buttermilk-syrup mixture with the rest of the ingredients. Prepare a loaf pan with non-stick spray or butter and line with parchment paper, allowing an overhang on the sides. Pour the batter into the loaf pan and bake at 175 degrees C for 1.5 hours. Let cool. May be served warm, even though it is quite sticky at that stage.
