Pukkola


Pukkola koosneb öö läbi piimas leotatud erinevatest hommikusöögi-helvestest, kuivatatud puuvijadest ja pähklitest/seemetest. Põhimõtteliselt külm puder: järjekorde mõnus vaheldus tavalisele pudrule. Ja hommikul jääb sättimiseks aega üle, kuna toit valmib ise öö jooksul.

You might be wondering what Pukkola is. It's rolled oats, cereals, dried fruit and nuts soaked in milk overnight. Like cold porridge or soaked cereals. Saying soaked cereals doesn't do justice to any food, does it?

Kaerakliipuder banaani ja aprikoosiga / Oat-Bran Porridge with Banana and Apricot


Kodumaine, lihtne toit, nagu puder ja hernesupp, on väga hea vaheldus foie gras'le ja quiche'idele. Kuigi ma ei söö seda vahelduseks, vaid peaegu iga päev, kuna ta on lihtsalt nii hea ja lihtne.
Tegelikult ei pea eeslastele vist rääkima, et puder ei ole vastik.

Kaerakliipudrul on, minu meelest, mannapudru mekk, aga ta on kindlasti hulka tervislikum. Banaan, aprikoos ja kaneel lisavad magusust lausa nii palju, et mina ei pane siia kunagi suhkrut.

Ühe kausitäie jaoks läheb vaja:
250 ml piima
5 sl kaerakliisid
2-3 kuivatatud aprikoosi
pool banaani
paar näpuotsatäit kaneeli

Mina panen poti põhja silmajärgi umber 50 ml vett ja siis lisan umbkaudu 200 ml piima, kuid võib ka ainult piimaga teha. Sel juhul peab peale passima, et ta põhja ei kõrbeks. Kui piim on keema läinud, keera pliidil kuumus madalamaks ja lisa kliid. Sega ja lõika aprikoosid tükkideks. Viska need koos kaneeliga potti ja sega veel 3-4 minutit, siis keera pliidil tuli maha ja jäta puder paisuma. Samal ajal püreesta banaan kahvli või pudrunuiaga. Kui puder on paisudes liiga kõvaks läinud, siis lisa tilk piima või vett ja sega läbi, enne kui kaussi valad. Aseta peale banaanimoos ja naudi.

This is again one of the foods I have been having every day for quite a long time now and I haven't gotten bored of it. Once more, porridge doesn't have to taste repulsive or tedious. The oat-bran has a nice texture, silky but still something to chew on. Reminds me of polenta a bit. I never add any sugar to this, as the apricots and banana are sweet enough for me and the cinnamon creates an illusion of sweetness too.

For one serving you'll need:
either 200 ml of milk + 50 ml of water OR 250 ml of milk
5 tablespoonfuls of oat bran
2-3 dried apricots
half a banana
a few pinches of cinnamon

It is better to use the water and milk mixture as it is less likely to get stuck at the bottom of you saucepan. If you are using only milk, do stir it a lot. Heat the milk and when the it has started boiling turn the it down slightly and pour in the bran, stir. Cut up the apricots and add them to the porridge with the cinnamon. Stir for about 3-4 minutes, then turn the heat off and let the porridge expand in the saucepan with the cover on. Meanwhile mash the banana with a fork or a potato masher. If the porridge has turned too thick then add a spoonful of milk and mix before pouring into a bowl. Serve with the banana jam.

Riisipuder vaarika ja kookospiimaga / Raspberry porridge with coconut milk

Kuigi ma olen suur pudrufänn, ei suudaks ma iga päev sama putru küll süüa. Seega eksperimenteerin koostisosadega tihti. Selles riisipudrus on kookospiim, mis annab pudrule mõnusa sametise meki. Banaan lisab magusust ja vaarikas hapusust. Koguseid ma täpselt ei tea, kuna viskasin kõik potti kokku. Pudru valmisetamisel on minu meelest kogustega mängimiseks ruumi küll.

Ühe väikese kausitäie jaoks peaks aga sobima sellised kogused:

0.5 dl pudruriisi (minu oma on täistera)
2 supilusiktäit kookospiima
väike peotäis vaarikaid (kasutasin külmutatuid)
1/4 banaani
teelusikatäis mett

Keeda riis. Nõruta, kuid jäta poti põhja natuke vett, et puder ära ei kõrbeks. Pane pott pliidile tagasi ja lisa kookospiim ning vaarikaid, sega. Purusta banaan kahvliga ja lisa pudrule koos meega. Vala kaussi ja naudi.

Porridge is a very old food that peasants used to eat. Today, it has been forgotten about in the western world and a lot of languages don't even have a word for it. However, it is still common in eastern and northern Europe and a lot of Estonian families eat it every morning, as it is healthy and will keep you full for a long time. Contrary to common belief, porridge can also be tasty, it really depends on what you put into it. Most people make their porridge with oat flakes and this is as far as their minds will stretch in this subject. However, it can also be made with barley, rye and wheat flakes as well as flour, buckwheat, rice and bran.

This one is with rice and coconut which gives a very silky taste. The banana adds sweetness and the raspberries colour and sourness. I didn't measure out all the ingredients so this list is quite rough.

A note about porridge rice: it is usually more round and sticks together when boiled.

Your will need:

0.5 dl of porridge rice, but any rice white will do, I used whole-grain.
2 tablespoonfuls of coconut milk
a small handful of raspberries (frozen will do)
1/4 of a banana
teaspoonful of honey


Boil the rice and pour out most of the water but do leave some to the bottom so it wont burn. Place the saucepan back onto the stove. While heating add the coconut milk and raspberries, stir until they are broken and the porridge is nice and pink. Smash the banana and add to the porridge with the honey. Mix and pour into a bowl. Enjoy!
