Suvikõrvitsa-läätse püreesupp / Courgette-Lentil Soup



Ilmade jahenedes tekib ikka soov mõnusa sooja supi järele, mida on mõnus dekadentlike võileibade kõrvale süüa. Tavaliselt on ainult köögivilju sisaldavad püreesupid veidi üksluise maitsega, selles supid sisalduvad läätsed aga muudavad selle siidjaks, nii et koort pole tegelikult vaja lisadagi.

Vaja läheb:
1 dl tumerohelisi (,,De Puy") läätsi
võid
1 sibul
1 küüslauguküüs
1 tl tüümianilehti
600 ml köögiviljapuljongit
350 g suvikõrvitsat
150 g spargelkapsast või varssellerit
soola
pipart

Keeda läätsi ligikaudu viisteist minutit ehk seni, kuni nad on pehmed, kuid mitte katki. Kurna ja loputa. Koori ja lõika sibul ning küüslauk väiksemaks, hakkida pole vaja, piisab neljaks lõikamisest. Pruunista keskmises potis võis koos tüümianiokstega. Lõika suvikõrvits ning brokoli (või seller) väiksemaks, umbes 5 x 5 cm kuubikuteks, ning lisa koos puljongiga potti. Keeda umbes 10 minutit - kuni köögiviljad on pehmed. Püreesta koos läätsedega, maitsesta soola-pipraga. Soovi korral serveeri koore või riivjuustuga.


As the weather gets colder I start craving for hot soups that go so well with filling, decadent sandwiches. Soups that contain only vegetables, no added cream or fats usually taste plain, however, the lentils in this one give a silken texture when puréed so there is no actual need for cream or cheese to be added.

You'll need:
1 dl De Puy lentils
butter
1 onion
1 glove of garlic
1 tsp of thyme leaves
600 ml vegetable broth
350 g courgette
150 g broccoli or celery stalks
salt
pepper

Boil the lentils for about 15 minutes or until they are soft but not porridge like. Drain and rinse under running water. Peel the onion and garlic, cut them into fours and fry, with the thyme leaves, until golden in a medium saucepan. Cut the courgette and broccoli into rough cubes (about 5 x 5 cm) and add to the saucepan with the broth. Boil until the vegetables are tender. Purée with the lentils, add salt and pepper to taste. Serve with cream or grated cheese if you wish.

Riisinuudli salat brokoli ja vürtsika tofuga / Rice Noodle Salad with Broccoli and Spicy Tofu


Siiamaani pole minu eksperimendid tofuga eriti vilja kandnud, lõpptulemus on olnud kas kummjas või maitsetu. Tõepoolest, tofut on kerge ära rikkuda või siis täiesti maitsetuks jätta.

Seekord aga, retsept välja valitud ja nimekiri näppus pidin leppima sellega, mis poes saadaval, ehk suitsutatud tofuga. Kahtlused olid suured, kuid lõpptulemus märkimisväärne. Isegi mu eriti skeptiline ema, kelle jaoks on tofu, soja ja muud loomse asendajad mõttetud, oli positiivselt üllatunud.

Salat oli kerge kuid toitev, vürtsikas ja vähemalt minu igapäevamenüüst veidi erinev.

Vaja läheb:
225 g extra-firm (suitsutatud) tofut vees
2 spl toiduõli
2 spl sojakastet
1/2 - 1 tl harissat (vastavalt taluvusele)
170 g riisinuudleid
225 g brokoliõisikuid
3 spl riisiveiniäädikat
1 tl värsket riivitud ingverit
1 tl tumedat seesamiseemneõli
2 jämedalt riivitud porgandit
5 suuremat redist
2 spl röstitud India pähkleid


Lõika tofu umbes kahe sentimeetristeks kuubikuteks ja aseta ükshaaval paksule majapidamispaberile või neljale-viiele üksteise peale asetatud majapidamispaberi tükile. Kata 4-5 majapidamispaberi lehega, kõige peale tõsta midagi rasket, näiteks keraamiline ahjuvorm, nii et see toetub kõigile tofu tükkidele. Lase 15 minutit seista.

Pane ahi 175 kraadi juurde sooja. Vispelda omavahel toiduõli, sojakaste, 1/2 tl harissat. Lisa tofu, sega ja lase 15 minutit maitsestuda. Aseta tofu tükid küpsetuspaberiga kaetud ahjuplaadile, jäta marinaad alles, ja küpseta 175 kraadi juures 10 minutit.

Keeda nuudlid vastavalt juhendile, pese külma vee all ning nõruta. Keeda või auruta brokol, jahuta külma vee all.

Lisa kõrvale pandud marinaadile ülejäänud harissa, riisiveiniäädikas, ingver ja seesamiõli, vispelda. Lisa nuudlid ja sega, seejärel lisa tofu, brokol, riivitud porgand ja õhukesteks ratasteks (näiteks juustunoaga) lõigatud redised. Sega ning serveeri röstitud India pähklitega.

So far, my experiments with tofu haven't been that great. The results have been either rubber-like or tasteless. Indeed, it's quite easy to ruin tofu if you don't know the right methods.

This time however, I had picked out a recipe with tofu included but due to the lack of choice at the store had to settle for smoked tofu. Even though my suspicions were great, the result was impressive. Even my highly skeptical mother, who finds tofu, soy and other meat-substitutes meaningless, was positively surprised.

This spicy salad was light but filling yet quite different to my everyday menu.

You'll need:
225 g extra-firm (smoked) tofu in water
2 tbsp cooking-oil
2 tbsp soy sauce
1/2 - 1 tsp harissa (depending on your taste)
170 g rice noodles
225 g broccoli (head only)
3 tbsp rice wine vinegar
1 tsp fresh grated ginger
1 tsp darm sesame oil
2 coarsely grated carrots
5 medium-large radishes
2 tbsp toasted cashew nuts


Cut the tofu into 2 cm cubes and place on several layers of paper towels, cover with additional paper towels. Place something heavy such as a heavy baking pan on top of the cubes to apply pressure. Let stand for 15 minutes.

Preheat the oven to 175 degrees. Whisk together the cooking-oil, soy sauce, 1/2 tsp harissa. Add the tofu cubes, toss to combine and let marinate for 15 minutes. Arrange the tofu on a single layer on a lined baking sheet and bake at 175 for 10 minutes or until lightly golden. Reserve the marinate.

Boil the noodles according to package instructions. Drain and rinse with cold water, drain well.
Boil or steam the broccoli until crisp-tender. Rinse with cold water and drain.

Cut the radishes into thin slices, you may want to do this with a cheese cutter. Add the remaining harissa, rice wine vinegar, ginger and sesame oil to the reserved marinade, whisk. Stir in the noodles, as well as the tofu, broccoli, grated carrots and radishes. Sprinkle with cashews.

Suvikõrvitsakook / Courgette Cake

Nagu turul, poes, maal ja internetis ringi hulkudes näha võib on käes suvikõrvitsahooaeg. See kook sarnaneb väga ameerikalikule porgandikoogile. Lihtne ja maitsev, eriti teega. Nagu selliste kookide puhul ikka läheb see seistes ainult paremaks.

Vaja läheb:
2.5 dl täisteranisujahu
2.5 dl nisujahu
1 tl kaneeli
1/2 tl riivitud muskaatpähklit
2 tl soodat
1 tl soola
1/4 tl küpsetuspulbrit
1 tl vanilliekstrakti või -suhkrut
3 muna
2 dl fariinisuhkrut
2.5 dl suhkrut
1,5 dl õunapüreed (võib asendada ka või või toiduõliga)
1/2 dl sulavõid või toiduõli
1 tl sidrunikoort
4.5-5 dl riivitud ja nõrutatud suvikõrvitsat* (minul kulus kaks keskmist suvikõrvitsat)
2 dl hakitud kreeka pähkleid
1 dl kuldseid rosinaid (soovi korral)

Katteks:
150 g toorjuustu
2-3 spl kondenspiima
1/2-1 tl sidrunikoort

*Enne suvikõrvitsa mõõtmist pigista sellest võimalikult palju vett sõela kohal välja.

Pane ahi 175 kraadi juurde sooja. Määri kandilise ahjuvormi (23x30 cm) ääred võiga.

Haki ja rösti pähklid. Sega omavahel jahud, kaneel, riivitud muskaatpähkel, sooda, sool ja küpsetuspulber. Kui kasutad vanillisuhkrut, lisa ka see.

Teises kausis vahusta munad õhuliseks. Lisa suhkrud, õunapüree, sulavõi, sidrunikoor ning kui kasutad vanilliessenssi, siis ka see. Sega hulka (kolmes osas) jahusegu. Lisa ka suvikõrvits ja pähklid-rosinad, sega.

Vala tainas ettevalmistatud ahjuvormi, küpseta 175 kraadi juures 40-45 mintit ehk seni kuni koogi keskosasse surutud puutikk jääb puhtaks. (Mina kasutasin väiksemaid vorme, koogid küpsesid 25 minutit). Enne katte lisamist lase koogil täielikult jahtuda.

Katte jaoks sega omavahel toorjuust, kondenspiim ja sidrunikoor. Mina panin kondenspiima silma ja maitse järgi, kuid kate võiks olla pigem kontrastiks magusale koogile kui lääge võõp.

As can be seen in food markets, stores, the countryside and on the internet the zucchini/courgette season is full on. This cake is actually quite similar to carrot cake. Easy to make but tasty, a perfect dessert with tea. And just like other similar cakes, it only gets better with time. I found the cake the best 2 days after baking, not that I got to try it any later.



You'll need:
2.5 dl whole wheat flour
2.5 dl all-purpose flour
1 tsp cinnamon
1/2 tsp grated nutmeg
2 tsp baking soda
1 tsp salt
1/4 tsp baking powder
1 tsp vanilla sugar or essence
3 eggs
2 dl brown sugar
2.5 dl granulated, white sugar
1.5 dl apple sauce (may be substituted for butter or vegetable oil
1/2 dl melted butter or vegetable oil
1 tsp lemon zest
4.5-5 dl grated courgette* (I used 2 medium sized courgettes)
2 dl chopped walnuts
1 dl golden raisins (optional)

For the frosting:
150 g cream cheese
1/2- 1 tsp lemon zest
2-3 tbsp condensed milk

*Before measuring the grated courgette place it in a sieve and press out some of the excess moisture.
Preheat the oven to 175 degrees C. Prepare a squared (23x30 cm) non-stick pan by covering it with butter. I used smaller tins and baked 

Chop and toast the nuts. Set aside. Whisk together the flours, cinnamon, grated nutmeg, soda, salt and baking powder. If you're using vanilla sugar then add that too.

In another bowl whisk the eggs until light and fluffy. Add the sugars, apple sauce, melted butter, lemon zest and vanilla essence, if using. In three parts, stir in the flour mixture. Add the grated courgette, toasted walnuts and raisins, if using.

Pour the batter into the prepared pan and bake at 175 C for 40-45 minutes or until a wooden toothpick inserted into the centre of the cake comes out clean. (I used smaller cake tins and baked mine for about 25 minutes). Let cool before covering with the frosting.

For the frosting, incorporate the cream cheese, lemon zest and condensed milk. I didn't measure the condensed milk but tasted the frosting while adding it bit by bit. You'd want a mixture that isn't too sweet but a nice contrast to the cake.

Kohupiima-pähkli-porgandivõie / Carrot Spread with Fromage Frais and Nuts


Esimest korda tegin seda määret kooliaasta alguses, veel enne kui ma toidublogidest sõltuvusse jäin. Ja nüüd kui kodus kitsemääre otsa sai oli vaja kiirelt sellele samaväärset asendust. Kuskil ajusopis oli mul meeles see määre meeles ja seda saigi korratud. Hämmastavalt maitsev. Krõmpsuvad pähklid, köömned ja porgand sobivad ülihästi kokku nii, et seda võiks lausa paljalt süüa. Ja tervislik on ka! Hetkel, kui kodu värsket leivalõhna pungil, hakkavad küll selle peale neelud käima.

Retsepti leidsin KataStroofilisest keskonnast, Kata leidis selle omakorda Aive Luigela kokaraamatust ,,Targalt toitudes terveks", mis ka mul puutumatult riiulis tolmu kogub.

Vaja läheb:
50 g kohupiima
1 sl hapukoort (sobib ka keefir, maitsestamata jogurt või majonees)
1 pisem toores porgand
paar supikusikatäit purustatud pähkleid
soola ja/või suhkrut

The first time I made this spread was just before I got addicted to food blogs. A few days ago, when I ran out of my beloved goat cheese spread, I needed a quick substitute that would be just as good. At the back of my head I remembered this one and looked up the recipe from my never-ending bookmarked recipe list. The crunchy nuts, cumin seeds and carrot are so tasty together I could even eat by itself without bread. Plus, it's incredibly healthy! Writing about this when the whole house smells of homemade bread is tempting, I must say.

The recipe for the bread on the first picture will be up shortly.

I guess it must be annoying that all the recipes are from Estonian food blogs as you can't browse them. I found this one from yet another Estonian food blog, Kata, however, found it from an Estonian cookbook called "Targalt toitudes terveks" by Aive Luigela.

You'll need:
50 g of fromage frais or low-fat cream cheese or quark
1 tbsp of sour cream or plain yoghurt or mayonnaise or buttermilk
a few tablespoonfuls of crushed nuts
salt/sugar

You may also add:
toasted cumin seeds
garlic salt
garlic pepper
dill
chili
plums
herbs
chives

Peel and grate the carrots. Toast the crushed nuts and mix everything together. Serve on homemade (black) bread.

Vähisaba Salat / Crayfish Tail Salad



Seda maitsvat salatit on võimalik teha nii krabipulkadest ehk makrast, lumekrabist kui ka vähisabadest. Esimesel korral tegin seda viimastest, kuna need meenutasid mulle vähki rohkem kui krabipulgad krabi. Kuid kuna salat oli nii hea, siis olin sunnitud järgmise salati tegema külmkapis vedelevatest oranžidest pulgakestest, mis millegi pärast üldse krabi ei meenutanud. Kusjuures viimaste maitse ei olnud pooltki nii hull kui ma kartsin, väga maitsev sai ka teine salat. Mina määrisin seda kodusele sepikule.

Retsept on nami-namist. Lisasin originaalile sinepi.

Vaja läheb:
300 g krabiliha maitselist makrat või vähisabasid
2 vart varssellerit
2 kuni 3 talisibulat või sibulapealseid
1 küüs küüslauku, soovi korral
1-2 sl sidrunimahla
5 sl majoneesi
5 sl hapukoort, toorjuustu või maitsestamata jogurtit
1 tl sinepit
soola
musta pipart

Haki krabipulgad, varsseller ja sibul väikesteks tükkideks, pressi küüslauk läbi küüslaugupressi. Kui kasutad vähisabasid ja need on väga suured, siis tasub needki pooleks lõigata. Sega kõik ained omavahel. Mina serveerisin salatit sepikul, kurgiviilu või salatilehega.



This tasty salad can be made with both crayfish tail and crab sticks. The first time I decided to use crayfish tails as they actually reminded me of crayfish, not like the crab sticks that have never even seen a crab. However, the salad turned out so tasty that I decided to give it a try with the strange orange sticks that stood there laying about in the fridge. And the second salad turn out just as good. I spread it on some homemade bread.

You'll need:
300 g crayfish tails or crab sticks
2 thinner celery stalks
2-3 chives
1 glove of garlic, if you wish
1-2 tbsp lemon juice
5 tbsp mayonnaise
5 tbsp sour cream or plain yoghurt
1 tsp mustard
salt
pepper

Cut the crab sticks into smaller pieces, if using crayfish then cut that smaller if needed. Chop the chives (you may use just the green parts or the whole thing, as you wish) and celery. Press the garlic through a garlic press and mix all the ingredients together. I served the salad on bread with a few slices of cucumber and lettuce.

Elini makarooniroog / Elin's Pasta Dish



Üks põhjus, miks ma selle blogi tegin, oli et panna, sõprade tungival palumisel, internetti üles just see retsept. Elini makarooniroog on nii minu kui mu venna üks lemmikutest ja lastele ning muidu pirtsakatele läheb väga hästi peale.

One of the reasons why I started this blog was to post the recipe for this dish on the internet as some friends had been asking for it. Elin's pasta dish is one of mine and my brother's favourites. Kids and otherwise picky people are bound to like it.

Tatra-tuunikalasalat / Buckwheat Tuna Salad

Tatar on üks tänuväärt vili (?), mida siinkandis liiga vähe süüakse. Seetõttu avastan ma tatra ikka uuesti ja uuesti iga kord kui ma, kas Eestis või kohalikus Euraasia poes käin. Seekord aga avastasin ta köögikapist, mis tuletas mulle meelde, et kord sai sellest tehtud üht lihtsat ja maitsvat salatit, mille me emaga kohe nahka panime.


Buckwheat is a great... fruit, it turns out, that is not very popular in the west. This is the reason I keep forgetting about it and re-discover it every time I got to Estonia or to the local Eurasian store. However, this time I discovered it from my kitchen and decided to make a simple but tasty tuna salad.

Kitsejuustu ja tüümianiga täidetud kana / Goat's cheese & thyme stuffed chicken



Seda rooga tegin samuti kuninglike pulmade vaatamiseks külla kaasa. Ma ei tea täpselt kui "inglise" see oli, kuid maitsev oli küll. Ja väga lihtne teha. Sobiks suurepäraselt argipäeva õhtusöögiks, kuna valmistamine ei võta kaua aega. Samas jätavad rullitud kanafileed mulje nagu nende kallal oleks kaua nikerdatud nii, et sobib ka pidulikumal puhul. Mulle meeldis, et juurviljad olid ka juures, nii ei pidanud kõrvale pakutava pärast muretsema.

This is another dish I took along to the royal wedding watching party. I found the recipe from bbcGoodfood.com but I am not sure how English it actually is. Nevertheless, it was a simple and delicious meal that was really easy to make, but could even be served at a fancier dinner party. The combination of chicken, cheese and bacon is excellent whilst the veggies add sweetness.

Peedi-šokolaadikook / Beetroot-Chocolate Cake



Selle kauni peedikoogi retsepti leidsin veebruarikuu Oma Maitsest. Nimelt on tegu Kolme Sõsara koogiga, mis pälvis "Kuldne Maius 2010" tiitli. Kõlab ju nii hästi, et lausa peab järgi proovima? Nagu ajakirjaski mainitud on kook parim alles mõne päeva pärast, kuna siis pääsevad maitsed paremini esile. Ja glasuuri võib ka juba siis ette ära teha, et ta kooki imbuks.

This recipe is from "Oma Maitse", an Estonian food magazine. This cake won what you would call the "Golden Dessert 2010" prize if translated. I found that exciting enough to try out and it was quite good, especially on the second day as the tastes get more intense after a few days. It would probably have been even better on the third, if it would have lasted that long. I will certainly make it again.

Grillitud pikk küüslaugusai / Grilled garlic baguette



Hästi lihtne ja maitsev küüslaugusai, mis sobib grillroogade kõrvale, kuid maitseb ülihästi ka niisama. Soojalt on ikka parim, siis tulevad ürtide maitsed kõige paremini esile. 

Mina olen retsepti veidi muutnud, kuid algretsept on pärit raamatust "100 grillrooga", kust leiab igasuguseid huvitavad lihamarinaade ja muid grillroogi, kaasa arvatud grill-magustoite. Ühesõnaga ühe suveköögi asendamatu osa. Ja kuna siinkandis on juba mõnusalt soe, siis avasime ka grillihooaja.




Vaja läheb:

1 pikk sai (kasutasin kolme väiksemat)
25 g võid (toatemperatuuril)
25 g ürdi-toorjuustu
3-5 küüslauguküünt
peotäid värsket basiilikut või 1.5 spl kuivatatut
(0.5 tl soola)

 
Lõika saia sisse 2 cm vahedega sälgid. Lõika nii sügavalt, kui saad ilma, et sai katki läheks. Aseta fooliumile. Sega omavahel pehme või, toorjuust, purustatud küüslauguküüned ja hakitud basiilikulehed. Määri segu sälkude vahele. Kata fooiumiga kinni ja grilli umbes 15 minutit või seni, kuni sai muutub pealt kuldseks ja krõbedaks. Ahjus võib seda teha 220 kraadi juures, mis võtab aega umbes 20-30 minutit. Selleks, et sai pealt krõbedaks läheks, võib fooliumit veidi paotada.

This bread is a delicious must have an any of our grillfests and already quite a few people are hooked. A  crunchy, salty, garlickly spicy and buttery bread is certainly not the healthiest but the taste makes up for that. It's great with grilled foods and meat but perfectly gratifying on its own too. I advise you eat it while it is warm because that's when it's at it's best as the herbs taste the strongest. 

You'll need:
a baguette
25 g of butter (room temp)
25 g of cream cheese with herbs
3-5 gloves of garlic 
a handful of fresh basil or 1.5 tbsp of dried
(o.5 tsp salt)


Cut deep slits into the baguette, each 2 cm apart, but don't cut through the bread. Place it on foil. Mix the butter, cream cheese, mashed garlic and chopped basil. Spread into the slits. Wrap in the foil and grill for about 15 minutes or until the bread is golden and crispy. This can also be done in the oven at 220 degrees for about 20-30 minutes. Unwrapping the foil slightly will make the bread crispy faster.

Pomeli-suitsulõhesalat / Pomelo and Smoked Salmon Salad



Selle salati retsept on pärit käesoleva kuu Oma Maitsest, millele ma tänu oma Eestist külas käinud tädile küüned külge sain. Kohendasin veidi koguseid ja tegin teise kastme. Kuna viimane nädal on olnud äärmiselt kevadine ja soe, siis sõin seda peale aiamööbli õue tirimist terassil. Imeilusa päikeselise ilmaga sobis kerge salat koos koduse leivaga ideaalselt.

Vaja läheb (ühele):

1 väike sibul
teelusikatäis võid
pool keskmist pomelit
pool avokaadot
50 g suitsulõhet
sidruni mahla
4-5 peotäit värsket salatit
sidruni mahla

Kaste:

1 spl majoneesi
1 spl maitsestamata jogurtit / hapukoort
0.5 tl meesinepit (või mõnda muud tavalisest magusamat, näiteks viigimarjasinepit)
tilli
näpuotsatäis soola
soovi korral mett

Sega omavahel kastmeained. Viiluta sibul ja prae võis, keskmisel kuumusel, kuldseks. Koori pomel, puhasta kilest ja tee väiksemateks tükkideks. Lõika avokaado pooleks, eemalda kivi, koori ja lõika tükkideks. Pritsi tükeldatud lõhele ja avokaadole peale veidi sidrunimahla, eriti sellele poolele, mida sa ei kasuta, sest muidu läheb ta pruuniks. Pane kõik ained kaussi, kalla üle kastmega ja sega läbi.

Since the weather has been just wonderful for the past week, we dug out our garden furniture and I used my chance to dine on the terrace. I generally like twisted food, as in bizarre stuff in them so I was drawn to the pomelo salad the second I saw it in an Estonian cooking magazine. A light and fresh pomelo salad with homemade bread was just perfect with this weather.

For one you'll need:

1 small onion
1 tsp of butter
half of a medium sized pomelo (mine was the size of a big orange)
half an avocado
50 g of smoked salmon
4-5 handfuls of fresh salad

Sauce:

tbsp of mayonnaise
tbsp of natural yoghurt
0.5 tsp of honey mustard (or any other sweeter one, I used fig mustard)
dill
pinch of salt

Mix the sauce ingredients together. Chop the onion and fry at medium heat in the butter until golden-brown. Peel the pomelo, remove the film-like part and cut the segments into smaller pieces. Cut half of the avocado and the salmon into smaller pieces and sprinkle some lemon juice on them, as well as the other half you are not using, as it will turn grey otherwise. Mix the sauce and all the other ingredients.

Porgandi-juustukook / Carrot-Cheesecake


Porgandikookide puhul lisab alati i-le täpi toorjuustukreem, kuid selles koogis on täpile lisatud i ja kook pahupidi pööratud."Kokku pandi kaks ameeriklaste lemmikut - porgandi- ja juustukook - ning sündiski täiesti uus maitseelamus." Ja mulle see maitseelamus täitsa meeldis: kookosetükid porgandikattes olid hamba all mõnusalt krõmpsuvad ja kate ise oli õrnalt karamelli-maitseline. 
Mina tegin väiksese koogi, 18 cm läbimõõdnuga vormis ja jagasin seega kogused kahega.

Suure koogi jaoks läheb vaja:

Tainas: 
1.5 dl jahu
0.5 tl küpsetuspulbrit
0.5 tl soodat
1 dl fariinisuhkrut
2 tl kaneeli
50 g kookoshelbeid
2 sl siirupit
1 dl peeneks riivitud porgandit
pool õuna
0.5 dl õli (või sulatatud võid)
1 dl hapukoort
1 muna

Täidis:
700g maitsestamata toorjuustu
1.5 dl hapukoort
4 muna
1.5 dl suhkrut
1 tl vanillisuhkrut
1 sidruni pressitud mahl

Sega omavahel jahu, küpsetuspulber, sooda, fariinsuhkur, kaneel ja kookoshelbed. Teises kausis sega siirup, riivitud porgand, kooritud ja riivitud õun, õli (või või), hapukoor ja muna. Vala siirupisegu jahusegusse ja sega ühtlaseks.
Täidise tegemiseks vahusta toorjuust ja lisa ükshaaval munad, mikserdades igaüht enne järgmise lisamist minut. Lisa hapukoor, suhkur, vanillisuhkur ja sidrunimahl. For carrot cakes the cream cheese topping is always the icing on the cake, but in this dessert the cake has been added to the topping and the whole thing is upside down. As the recipe claims, the American's two favourite cakes were put together and a whole new taste experience was invented. Despite my brother making faces at the carrot part (again!) I enjoyed this cake quite a bit. The coconut flakes in the dough were nice and crispy and the topping itself had a caramelly flavour. 
I made my cake in an 18 cm springform and divided the ingredients by two.

You'll need:

Dough:
1.5 dl of flour
0.5 teaspoonful of baking powder
0.5 teaspoonful of soda
1 dl of farin (brown) sugar
2 teaspoonful of cinnamon
50 g of coconut flakes
2 tablespoonfuls of sirup
1 dl of grated carrots
half an apple
0.5 dl of oil (or melted butter)
1 dl of sour cream (or just thick cream)
1 egg

Filling:
700 g of cream cheese
1.5 dl of sour cream (or thick cream)
4 eggs
1.5 dl of sugar
1 teaspoonful of vanilla sugar
juice of one lemon

Mix the flour, baking powder, soda, farin sugar, cinnamon and coconut flakes. In another bowl mix the sirup, grated carrots, peeled and grated apple, oil (or butter), sour cream and egg. Pour the sirup mixture into the flour one and mix.
For the filling, whisk the cream cheese and add the eggs one by one, mixing for one minute between each. Add the sour cream, sugar, vanilla sugar and lemon juice.
Line a 24 cm round springform with a baking sheet. Pour the filling in it and place the dough on top with a spoon. Spread it slightly with a knife.
Bake at 175 degrees for 1 hour.
Cool and keep in the fridge for at least 5 hours before eating.

Küüslaugu-juustumääre / Garlic-Cheese Spread


Mõnusalt küüslaugune juustumääre, mille järgi tekib vajadus just talveperioodidel. Rosin lisab magusust ja neutraliseerib küüslaugu vänget maitset, kuid kellele magus soolases toidus ei meeldi võib selle välja jätta või asendada näiteks pähklitega. Sobib ideaalselt enda tehtud leivaga.
Kogused on umbkaudsed.

Vaja läheb:
100 g riivitud juustu (gouda, cheddar ja edamer on "õrnema" maitsega ja sobivad hästi)
50 g majoneesi (kasutasin lahjat)
väike peotäis rosinaid
2-3 küünt küüslauku

Purusta küüslauk, sega kõigi ülejäänud ainetega. Määri leivale ja naudi.

I usually grave for this tasty spread during winter, as garlic is known (to all Estonians) to boost one's immune system. The raisins add a sweet flavour to the salty tastes, but those who don't enjoy sweet in otherwise salty foods can leave them out or replace them with toasted walnuts.

You'll need:
100 g grated cheese (edam, cheddar and gouda have suitable mild flavours)
50 g mayonnaise (I used light)
a small handful of raisins
2-3 gloves of garlic

Press the garlic through a garlic masher and mix with the rest of the ingredients. Spread on dark bread and enjoy.

Indiapärane läätse-porgandisupp / Lentil-Carrot Soup à la India


See vürtsikas püreesupp valmib vähem kui poole tunniga. Kuigi Matu krimpsutas selle peale ainult nina ja otsustas edasi nälgida, maitses see mulle väga. Ja muidugi ei tasu unustada tervislikkuse faktorit. Pakkusime seda nädalavahetusel külalistele koos juustuküpsistega amuse bouche'ina ja ka neile meeldis. Seega läheb kordamisele.

Kuna retsept on internetist siis leiab eestikeelse retsepti siit. Lisan, et mina kasutasin tšillipipra asemel cayenne'i pipart.


This spicy purée soup takes less than 30 minutes to make and even though Martin made a face at it and decided to keep starving, I liked it a lot. We also offered some to our quests this weekend as an amuse bouche with cheese biscuits and they liked it too. Therefore, I will certainly make it again.

This recipe is from an Estonian foodblog, here. Not that you'd understand anything given you are reading this in English. Anyways, the soup should be enough for two to three people.

You'll need:
600 ml of vegetable broth
100 g of red lentils
2-3 carrots
1 stalk of celery
1 onion
2 cloves of garlic
half a red chili (I used some cayenne pepper instead)
1 tablespoonful of garam masala
1 tablespoonful of butter

Fry the garlic and onion slices in butter on medium heat until golden-brown. Add the garam masala and heat for another minute. Pour everything into a saucepan and add the sliced celery and carrots, as well as the broth, lentils and chili. Boil for 10-15 minutes on a low heat, until the carrots are soft. Purée the soup.


Kruubi-läätsesalat / Wheat Berry-Lentil Salad


Üldjuhul mulle ei meeldi, kui selliseid roogi salatiteks kutsutakse, kuid ega ta päris roog ka ole ja sobivamat nime ei tule pähe. See selleks, sisu on ikkagi olulisem ja palju huvitavam. Mitte ainult ei ole see roog läbi ja lõhki tervislik, vaid ka sõltuvust tekitav. Ja imelihtne teha, kuigi nõuab pikka keetmist. Sobib nii paljalt söömiseks kui prae kõrvale.

Kui läätsi ja kruupe öö otsa leotada, siis peab neid pärast keetma umbkaudu kümme minutit. Muidu kulub kruupide keetmiseks tund ja läätsede keetmiseks 20 minutit. 

Koguseid mina eriti ei jälgi nii, et võite vabalt neid muuta. Üritasin nad siiski umbkaudselt kirja panna.

Vaja läheb:
1-2 sibulat
tassitäis kruupe (mina kasutan viie erineva segu)
tassitäis läätsi (kasutan rohelisi)
75 g fetat
supilusikatäis võid

Pane kruubid tunniks ajaks keema. Kui vesi ära keeb lisa juurde. Lisa läätsed, kui kruubid on juba 35 minutit keenud. Kui kasutad näiteks orantše läätsi, siis lisa need hiljem ja keeda vastavalt juhistele. Prae sibularõngad keskmisel kuumusel võis, kuni nad kuldpruuniks muutuvad. Purusta sõrmede vahel feta ja sega see kõigi ainetega.

I am absolutely aware that this food is not a salad but I just can't think of anything better to call it. Nevertheless, this dish is absolutely delicious and entirely healthy. And super easy to make, even thought the wheat berries take quite a bit of time to boil. I think this is tasty enough on its own but it's also great with meat and chicken.

If you soak the wheat berries and lentils overnight then they only need about 10 minutes to boil after. If you don't then the wheat berries take an hour and the lentils about 25 minutes to boil. I never bother noting down the amounts so this is just a rough estimate, feel free to add or take away.

You'll need:
1-2 onions
about 250 ml of wheat berries (I use a mix of 5 grains)
about 125 ml of lentils (I use green)
75 g of feta
a spoonful of butter

Boil the wheat berries for an hour. Add more water if it evaporates. When there is just about 25 minutes left add the lentils. If you are using orange or some other ones then look at the time they need to be boiled, as orange lentils cook faster. Slice the onions and fry in butter on medium heat until golden-brown. Break the feta into small pieces and mix everything together.

Sibulapirukas / Onion quiche


Jällegi midagi, mida karta - sibul, suurtes kogustes.

Tegelikult seonduvad mul selle pirukaga väga ilusad mälestused. Nimelt tegi Elin meile seda suviti suuremate tähtpäevade puhul, nagu Luxembourgi suurtüki või Matu sünnipäeval ja me sõime seda alati terassil seni kuni kõhud valusad. Nendes õhtusöökides oli alati midagi rahustavat - rohelus ja värske õhk, ringilendlevad nahkhiired ja Ülo, naabermajal peegelduv päikeseloojang, küünlad ja hea toit.

Ühesõnaga, see pirukas on suussulav, vähemalt minu suus ta sulab küll. Ja isegi mu pirtsakas vend sööb kahe suupoolega. Minu maailmas sobib ta ideaalselt grillitud kana ja värske salatiga.



Vaja läheb:

Põhi:
100 g toasooja võid
50 g riivjuustu
1/2 dl kohvikoort
2 1/2 dl jahu (ma kasutan täisteranisujahu)
1/2 dl kaerahelbeid

Täidis:
5 suurt sibulat
soovi korral ka umbes 100 g peekoni- või singitükke

Kate:
2-3 muna
2-3 dl riivjuustu
2 dl kohvikoort
1 tl muskaatpähklit
tilli või murulauku
1/2 tl musta pipart
1 1/2 tl soola

Pane ahi 200C juurde sooja. Rösti kaerahelbed pannil. Kata (26 cm) vormi põhi küpsetuspaberiga ja määri ääred võiga. Näpi kõik põhjakoostisosad ning suru saadud sega vormi põhja ja äärtele. Torgi kahvliga põhja augud, kata ääred fooliumiga ja küpseta 200 kraadi juures 10 minutit.

Lõika sibul pool-ratasteks ja hauta pannil võis keskmisel kuumusel kuldpruuniks. Soovi korral prae juurde ka sinki. Vala sibul (ja sink) vormi. Klopi lahti munad, lisa koor, maitseained, kaasaarvatud hakitud till/murulauk ja riivjuust. Vala sibulale. Küpseta 200 kraadi juures 30-40 minutit.



Yet again, something utterly strange to put into a quiche. However, this pie is so delicious, even children and men who claim not to like onions, will eat it.

You'll need:

Base:
100 g of butter at room temperature
50 of grated cheese
1/2 dl of single cream
2.5 dl (whole wheat) all-purpose flour
1/2 old fashioned oats

Filling:
5 big onions
100 g lardon or ham, optional.

Topping:
2-3 eggs
2-3 dl grated cheese
2 dl of single cream
1/2 teaspoonful of grated nutmeg
dill or ciboulette
1/2 teaspoonful of black pepper

Turn the oven to 200 degrees celcius. Toast the oat flakes on a hot skillet. Cover a 26 cm springform's base with baking paper and butter the sides. Mix all the base's ingredients together and cover the springform's base and sides with the dough. Prick the base with a fork, cover the sides with foil and bake at 200 degrees for 10 minutes.

Chop the onion into crescents and fry with butter on medium heat until golden-brown. If using the lardons or ham fry these too. Pour on top of the base into the springform.

For the topping whisk the eggs, add the single cream and the rest of the ingredients. Pour on top of the filling and bake at 200 C for 30-40 minutes.

Serve with fresh salad, grilled chicken or vegetables.

Porgandikook / Carrot cake


Eelmine nädalavahetus tegin sellist porganidikooki. Mulle see väga maitses, ei olnud liiga magus nagu ma kartsin ja kreem, milles ma algul väga kahtlesin, oli kui täpp i peal. Väga hea oli kook ka jogurti jäätisega ning kohupiimaga. Retsept on saadud siit, blogist hea toit, parem elu. Tegin ka paar muudatust retseptile: 250 ml õli tundus mulle väga suur kogus ühe koogi kohta, niiet panin 250 grammi võid, mis on niikuinii väiksema rasvasisaldusega. Veel asendasin muskovaado suhkru tavalisega, kuna minu oma oli kuskilt vett saanud ning kivikõvaks läinud ja ma ei viitsinud seda raiuma hakata. Viimaks panin poole koguse jahust täistera ja teise rafineeritud nisujahu. Kaneeli uhasin ka hulka rohkem, kui retseptis nõutud oli. Nii supilusikatäie.

Last weekend I made this carrot cake. A lot of people, including my brother, get scared at the word carrot and dismiss it as vegetables in desserts is a no-no combination. However, there was no vegetable taste and I liked this cake a lot. I was not very convinced with the cream on top of the cake and thought it wouldn't add a lot but it did. However, the cake was also good with ice-cream, I had a yoghurt one, and fromage frais or quark.

I made a few adjustments to the original recipe and will write it up with them included.
Lisan veel, et seda kreemi, mis originaal retseptis on ma ei teinud, kuna või siukses kreemis tundus kahtlane. Seega üritasin ma teha toorjuustu ja valge šokolaadi kreemi. Justnimelt üritasin, kuna mu spetsiaalsesse vesivann-potti sattus mingil imekombel vist tilkk vett.

Õnneks oli mul kaks pakki šokolaadi ja teisega katsetasin mikrolaineahjus.
Fortunately, I had two packs of chocolate so I decided to melt the second one in the microwave.
Seega jäi valge sokolaadi kreem mu koogilt ära.
Therefore, the white chocolate cream never made it on top of the cake.
Viimaks lisan, et arukam oleks kasutada bio tsitruselisi, kuna koor on just see koht, kuhu kogunevad kõik need mürgid, millega neid pritsitakse.
And last but not least, I suggest using biological citrus fruits as they are not sprayed with chemicals that remain in the peel.

Here's the recipe in English:

250 g of butter
300 g of flour
1 tablespoon of cinnamon
0.5 teaspoons of soda
1 teaspoon of baking powder
200 g muscovado sugar (I used regular refined sugar)
4 eggs
peel of one orange
peel of one lemon
200 g grated carrot
150 g of walnuts


Topping:
 200 g cream cheese
peel and juice of one orange
a sheet of gelatin if needed

Line a spring-form with cooking paper. You may also use a muffin pan, in that case use muffin cups as well, the baking time will be a lot shorter as well, about 30 min. However, I used a rectangular baking tin that I covered with butter and bran.

Melt the butter and let cool. Mix the flour, cinnamon, soda and baking powder. Add the sugar. Whisk the butter with the eggs and citrus peels. Add the grated carrot and mix with the flour mixture then add the chopped walnuts. Bake at 140 degrees for an hour and 20 minutes. The cake is ready when an inserted match remains entirely clean, mine took two hours for that. Let cool.

If the cake raises a lot then you can cut the top off as the cream would just pour down the sides. For the topping whisk the cheese with the peel and juice. If the mixture seems too fluid add a gelatin mixture. The topping will turn more solid in the freezer, however.
