Purukattega banaanimuffnid / Banana Crumb Muffins


Nagu ma juba kunagi ammu mainisin, on meie koolis traditsioon õpilastel korda-mööda tundidesse kooki või muid küpsetisi kaasa tuua. Seda eriti suuremat ajutegevust nõudvate tundide puhul, nagu edasijõudnute matemaatika või bioloogia. Mitte et minu edasijõudnute inglise keele tund keeruline oleks: loeme raamatuid ja vaatame filme.
Eelmine nädal oli minu kord unisele klassile midagi turgutavat hommikusöögiks pakkuda ja mis sobiks paremini hommikukohvi kõrvale kui banaanimuffinid?

Ette ja taha kiidetud retsepti valisin allrecipes.com lehelt ja oli hää küll. Kerkisid ka hämmastavalt. Hoiatuseks lisan, et koogid tõmbusid järgmiseks päevaks veidi pruunimaks, seega, kes on silmailu peal väljas võiks banaanide hulka veidi sidrunimahla pigistada. Veel, originaalretseptis kasutatakse purukattes pruuni suhkrut, kuid seegi võtab välimuselt nii mõnegi palli maha, seega kasutasin valget suhkrut, pruuni aga peitsin tainasse.


Vaja läheb (12 muffinit):
190 g nisujahu
1 tl soodat
1 tl küpsetuspulbrit
1/2 tl soola

1/2 tl ingveripulbrit (soovi korral)
3 küpset banaani (+ sidrunimahla)
150 g (pruuni) suhkrut
1 muna
75 g sulavõid

Purukate:
2 spl nisujahu
75 g (pruuni) suhkrut
1/2 tl kaneeli
15 g võid

Pane ahi 190 kraadi juurde sooja. Sega suures kausis jahu, sooda, küpsetuspulber, sool, kaneel ning soovi korral ka muskaatpähkel ning ingveripulber. Teises kausis vispelda purustatud ja soovi korral vähese sidrunimahlaga segatud banaanid, 150 g suhkrut, eelnevalt lahtiklopitud muna ning sulavõi. Lisa banaanimass kuivainetele ning sega nii palju kui vaja, kuid nii vähe kui võimalik. Jaga tainas eelnevalt kas paber- või silikoonvormidega täidetud muffinivormi ja küpseta 5 minutit ehk seni, kuni muffinid hakkavad juba tahenema, kuid on veel pehmed.

Samal ajal mudi jahu, suhkur ja kaneel võiga puruks ning pudista 5 minutit küpsenud muffinitele. Küpseta veel 15-20 minutit või seni, kuni muffinite keskosasse surutud puutikk tuleb puhtalt välja. Parimad ahjusoojalt hommikukohvi kõrvale.




As I have previously mentioned there is a tradition in our school for students to bring cake to certain lessons, especially those where more thinking is required, such as advanced maths or biology. Not that my advanced English requires too much cognitive activity - we watch movies or read books. Last week it was my turn to bring breakfast to the class and what would go better with coffee than banana muffins, I figured.

The much praised recipe is from allrecipes.com and the muffins lived up to their reputation. I was impressed by how much they rose. As a precaution, the muffins turned a darker, browner hue overnight so to improve the visual aspect one could add some lemon juice to the smashed banana. What's more, the original recipe calls for brown sugar for the crumble, but that knocks off points from the appearance as well. Thus, I used refined sugar for the crumble and hid the brown one inside the muffins.

You'll need (12 muffins):
190 g all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground nutmeg (may be omitted)
1/2 tsp ground ginger (may be omitted)
3 ripe bananas (+ lemon juice)
150 g (brown) sugar
1 egg
75 g melted butter

Crumble topping:
2 tbsp all-purpose flour
75 g (brown) sugar
1/2 tsp cinnamon
15 g butter

Preheat the oven to 190 degrees. In a large bowl, mix together the flour, baking soda, baking powder, salt, cinnamon and, if using, the nutmeg and ground ginger. Smash the bananas using a fork, add some lemon juice, if you wish. In another bowl, beat together smashed bananas, 150 g (brown) sugar, egg and melted butter. Stir the smashed banana mixture into the flour mixture just until moistened. Spoon the batter into prepared muffin tins and bake at 190 degrees for 5 minutes or until the muffins are beginning to solidify.

At the same time mix together the (brown) sugar, flour and cinnamon. Cut in the butter until the mixture resembles coarse meal. Sprinkle topping over muffins and bake for another 15-20 minutes or until a wodden toothpick inserted into the middle of a cake comes out clean. Best with coffee.

,,See kook" / "That Cake"


Meie peres on nii, et ilma igasuguse kokkuleppe ega seletuseta tähendab ,,See Kook" Vilma, kas Juubeli või Eerika, pulbriga tehtud kohupiima-purukooki. Retsept on endine, imelihtne ja pähekulunud. See kord kasutasin Juubelitordipulbrit, pohli ja panin purukattesse supilusikatäie kaneeli. Tulem oli üle ootuste hea.


In our family "That Cake" stands for this fromage frais and crumble cake and no more explanation is needed. This time I used plain, yellow cake mixture (Juubelitordipulber), lingonberries and put a tablespoonful of cinnamon into the crumble topping. The result was surprisingly good. The recipe is the same as always.

Domino tort / Oreo Cake


Sügise esimesel päeval ehk mu venna kuueteistkümnenda sünnipäeva tähistamiseks sai sünnipäevalapse soovil tehtud tort Oreo küpsistega, Eesti mõistes dominotega. Välimus on kindlasti dekadentlik ja pidupäevale sobiv, valmistus aga üpris lihtne. Nii sünnipäevalaps kui külalised jäid tordiga väga rahule, minagi olin heas mõttes üllatunud.


Vaja läheb:

Biskviitkihid:
50 g tumedat kakaod
75 g fariinsuhkrut
250 ml keevat vett
225 g nisujahu (millest poole võib täisteranisujahuga asendada)
1/2 tl küpsetuspulber
1/2 tl soodat
125 g toasooja võid (millest poole võib õunakastmega asendada)
125 g suhkrut
2 tl vanilliekstrakti
2 muna


Täidis-kreem:
200 ml vahukoort
300 g toorjuustu
1 dl tuhksuhkrut
2 tl vanillisuhkrut
1 pakk ehk 8 g vahukoorestabilisaatorit
175 g domino või oreo küpsiseid


Kaunistuseks:
8 domino või oreo küpsist (a la 80 g)
8 suurt maasikat


Määri kaks lahtikäivat koogivõrmi võiga (minu omad oli umbes 24 cm, retseptis nõuti 20seid). Sega vispliga kakao, fariinsuhkur ja keev vesi ning jäta jahtuma. Sega omavahel jahu, küpsetuspulber ning sooda. Vahusta või ja suhkur helekollaseks, kui kasutad õunakastet siis lisa see peale vahustamist. Vahustamist jätkates lisa vanilliekstrakt, seejärel üks muna ja koheselt peale seda suur supilusikatäis jahu-segu. Lisa ka teine muna ning vahustamist jätkates ülejäänud jahu-segu. Sega hoolikalt hulka kakao-vesi, jälgides, et tainasse ei jääks tükke. Jaga tainas ettevalmistatud vormide vahel ning küpseta 180 kraadi juures 30 minutit või seni kuni kookide keskosasse surutud tikk tuleb puhtalt välja. Enne kihtide ladumist lase põhjadel jahtuda.

Täidiskreemi jaoks vahusta koor ning lisa kõik ülejäänud ained. Vahusta kuni kreemile jäävad teravad tipud. Haki ning sega hulka küpsised.

Kõige mõtekam on kook laduda serveerimistaldrikule. Aseta ühele biskviitpõhjale pool kreemist, tõsta peale teine põhi ning kata kreemiga. Hoia tort serveerimiseni külmas. Enne sööma asumist kaunista maasikate ning hakitud küpsistega.

I baked this cake for my brother's 16th birthday which is on the first day of Autumn. The birthday child asked for something, anything with oreos and this decadent-looking yet quite easy to make cake seemed appropriate for the occasion. Both my brother and the quests were very pleased with it, I was also quite positively surprised with the outcome.

You may also use Dominos, the Finnish equivalent to Oreos.


You'll need:

For the cake layers:
50 g best-quality cocoa powder, sifted
75 g dark muscovado sugar
250 ml boiling water
225 g plain flour (half of which could be substituted for whole grain flour)
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
125 g soft unsalted butter (half of which can be substituted with apple sauce)
125 g caster sugar
2 teaspoons vanilla extract
2 eggs

For the cream:
200 ml double cream
300 g cream cheese
1 dl caster sugar
2 tl vanilla sugar
1 sachet (8 g) of whip cream stabiliser
175 g oreo or domino bisquits

For decoration:
8 domino or oreo bisquits (a la 80 g)
8 big strawberries

Preheat the oven to 180 degrees.Line the bottoms of two springforms (mine were 24 cm, the recipe calls for 20) with parchment paper and butter the sides.

Whisk to mix the cocoa, muscovado sugar and boiling water, set aside. Stir the flour, baking powder and baking soda together in another bowl, set aside.

Cream the butter and caster sugar together, beating well until pale and fluffy. Beat in the apple sauce, if using. Dribble the vanilla extract into the butter-sugar mixture, mixing all the while, then drop in 1 egg, quickly followed by a scoopful of flour mixture, then the second egg.
Keep mixing and incorporate the rest of the dried ingredients for the cake, then finally mix and fold in the cocoa mixture, making sure not to leave in any lumps.

Divide the batter between the two prepared springforms and bake for about 30 minutes or until a cake tester comes out clean. Let the cakes cool completely before layering with the cream.

To make the filling whisk the double cream, add the rest of the ingredients and whisk until soft peaks appear. Stir in the chopped bisquits.

It's best to layer the cake on the plate you are going to serve it on. Spread half of the cream filling on one cake base, cover with the second one. Top with the rest of the oreo-cream. Refrigerate until serving. Before serving decorate the cake with strawberries and the rest of the oreos.

Ploomi-mandlikook amarettoga / Plum and Almond Cake with Amaretto


Luksemburgis meil õunapuud pole. Ploomipuud ka mitte. Tegelikult kasvab meie aias vaid piparmünt, kuskil nurgas vireleb elu ja surma vahel mustsõstrapõõsas. Siin riigis ei ole kommet kasvatada endale toitu, eks selles mängi oma rolli ka ajalugu. Uskumatu, aga rohkem kui kilo seente koju viimine selle riigi metsadest on vargus. Kuid just ise kasvatamisest ja korilusest ma puudust tunnengi.

Võibolla tõesti ei ole siinkandis pea kellegi aias ploomipuid, aga see ei tähenda, et neid üldse poleks. Vastupidi. Minu maja vastas, kuid siiski pisavalt kaugel naabrite valvsatest pilkudest, on uhke ploomivõsa. Võsa just seetõttu, et ploome täis puud on täiesti võssa kasvanud ja uhkelt kibuvitsadega ümbritsetud.

Tühja see ühe kilo reegel, või siiski seadus, ja ärakriibitud käed, ära sai toodud kümme kilo ploome!

Järgmine etapp oli otsida välja kõik kõige paremad ploomikoogi retseptid ja asuda võitlusesse hämmastavalt kiiresti riknevate ploomidega. Esimesena postitan ploomimaratoni võitnud koogi - amaretto ja mandlitäidisega, pealt purukattega.



Vaja läheb:

Põhi:
190 g jahu (millest soovi korral 95 g täisteranisujahu)
näpuotsatäis soola
50 g suhkrut
80 g külma võid
1 muna


Täidis:
50 g toasooja võid
40 g suhkrut
50 g kondenspiima
1 muna
90 g jahvatatud mandleid
2 spl (täisteranisu)jahu
2 tl kaneeli
1/2 dl amarettot
umbes pool kilo magusaid ploome


Purukate:
4 spl pehmet võid
1 dl suhkur
1 dl jahu


Muretaina põhja jaoks sega jahu, sool ja suhkur. Lisa tükeldatud või, haki või näpi segu sõmeraks. Klopi lahti muna ning lisa jahu-või segule. Mähi tainas toidukilesse ja pane 30 minutiks külma. Suru tainas võiga määritud lahtikäivasse koogivormi (26 cm) ja täksi põhja kahvliga augud. Aseta põhjale foolium või küpsetuspaber ning seejärel raskuseks kuivatatud herned, oad või keraamilised kuulid. Pane vorm küpsetamiseni külmkappi.

Täidise jaoks hõõru toasoe või suhkruga kohevaks, lisa kondenspiim ning vahustamist jätkates muna. Sega hulka ka mandlid, jahu, kaneel ja amaretto. Lõika ploomid pooleks, eemalda kivid.

Küpseta põhi 200 kraadises ahjus 10 minutit, seejärel eemalda raskus ja foolium ning küpseta veel 5 minutit. Vala täidis põhjale ja laota ploomid korrapäraselt peale. Purukatte jaoks näpi või, suhkur ja jahu sõmeraks ning pudista koogile. Küpseta 200 kraadises ahjus 25-30 minutit. Serveeri vanillijäätise või -kastmega.

We don't have an apple tree here in Luxembourg. Nor a plum tree. In truth the only edible thing growing in our garden is peppermint, although we do have a blackcurrant tree lingering between life and death. There is no tradition to grow one's own food in this country and, well, history certainly plays a role here too. Unbelievable to an Estonian but picking more than a kilo of mushrooms from a forest is a robbery! Thus it's the growing and harvesting, the do it yourself lifestyle, so common to Estonians, that I miss in this country.

Hardly anyone here has a plum tree in their garden but that doesn't mean there aren't any at all. Indeed, across the field opposite to my house are huge wild plum trees, surrounded by prickly wild roses...

Who cares about the one kilo rule, okay law, and broken hands, we brought home 10 kilos of plums!

The next stage was to find the best plum cake recipes and try to use all the fruit up before they go bad. The first recipe I'll post is the winner of our plum marathon - an almond - amaretto cake with crumble topping.

You'll need:

Bottom:
190 g flour (of which 95 g can be whole grain)
pinch of salt
50 g sugar
80 g cold butter, cut into cubes
1 egg


Filling:
50 g soft butter
40 g sugar
50 g condensed, sweetened milk
1 egg
90 g almond meal
2 tbsp (whole wheat) flour
2 tsp cinnamon
1/2 dl amaretto
about 1/2 kilo sweet plums


Topping:
4 tbsp soft butter
1 dl sugar
1 dl flour


For the pâte sablée base incorporate the flour, salt and sugar. Add the butter and either pick the dough with your finger until it resembles crumble or chop the butter into the dry ingredients with a knife. Whisk the egg sightly to integrate the yolk with the white and add to the flour-butter mixture. Wrap the dough into film and refrigerate for 30 minutes. Line a prepared springform (26 cm) with the dough and using a fork make a few holes into the pastry. Cover the pastry base with foil or parchment paper and fill the springform with dried beans, peas or special ceramic balls. Refrigerate the pastry until baking.

For the filling whisk the soft butter with the sugar, add the condensed milk and egg, while whisking. Stir in the almond meal, flour, cinnamon and amaretto. Cut the plums into halves or smaller depending on their size, remove the pits.

Bake the base at 200 degrees for 10 minutes, remove the beans/peas/ceramic balls and foil and bake for another 5 minutes. Pour the filling on top of the base and neatly cover with the plums. For the topping, work the flour, sugar and butter into crumble and sprinkle on top of the plums. Bake at 200 degrees for 25-30 minutes. Serve with vanilla ice cream or sauce.

Pohla-toorjuustukook / Lingonberry Cheesecake


Juba augusti lõpus sai ristiisa külaskäigu puhul tuliuuest Nami-Nami kokaraamatust tehtud pohla-toorjuustukooki. Algul võõrana näiv kombinatsioon toorjuustust, pohladest ja liivatainast osutus üle ootuste maitsvaks, järgmisel pohlauputusel teen kooki kindlasti veel.

Retsepti leiab nii Nami-Nami kokaraamatust kui kodulehelt. Mina asendasin poole nisujahust täisteranisujahuga ja toorjuustu vahustasin enne teiste ainete lisamist üksinda kohevaks.

I made this cake already at the end of August when my godfather and his wife payed us a visit on the countryside. I was slightly suspicious of the possible outcomes of lingonberries, cream cheese and pate sablée in a cheese cake but the result was surprisingly good. I will definitely make this cake again on the next lingonberry overload.

You'll need:

Base:
100 g butter, at room temperature
85 g sugar (1 dl)
1 large egg
175 g all-purpose flour (about 3 dl) (I substituted 1.5 dl with whole wheat)
0.5 tsp baking powder
pinch of salt

Filling:
600 g cream cheese
100 g sugar (just over 1 dl)
3 large eggs
1 tsp vanilla extract
peel of 1/2 orange


Topping:
100 g lingonberries

For the base whisk the butter and sugar, add the egg. Incorporate the dry ingredients and add to the sugar-egg mixture. Cover the sides and base of a prepared 26 cm springform (about 3 cm high on the sides). Place the springform in a fridge while making the filling.

Whisk the cream cheese by itself, then incorporate with the rest of the ingredients. Pour the filling on top of the base and cover with the lingonberries. Bake at 180 degrees for about 45 minutes, until the filling is almost solid. Let cool completely before serving.

Suvikõrvitsakook / Courgette Cake

Nagu turul, poes, maal ja internetis ringi hulkudes näha võib on käes suvikõrvitsahooaeg. See kook sarnaneb väga ameerikalikule porgandikoogile. Lihtne ja maitsev, eriti teega. Nagu selliste kookide puhul ikka läheb see seistes ainult paremaks.

Vaja läheb:
2.5 dl täisteranisujahu
2.5 dl nisujahu
1 tl kaneeli
1/2 tl riivitud muskaatpähklit
2 tl soodat
1 tl soola
1/4 tl küpsetuspulbrit
1 tl vanilliekstrakti või -suhkrut
3 muna
2 dl fariinisuhkrut
2.5 dl suhkrut
1,5 dl õunapüreed (võib asendada ka või või toiduõliga)
1/2 dl sulavõid või toiduõli
1 tl sidrunikoort
4.5-5 dl riivitud ja nõrutatud suvikõrvitsat* (minul kulus kaks keskmist suvikõrvitsat)
2 dl hakitud kreeka pähkleid
1 dl kuldseid rosinaid (soovi korral)

Katteks:
150 g toorjuustu
2-3 spl kondenspiima
1/2-1 tl sidrunikoort

*Enne suvikõrvitsa mõõtmist pigista sellest võimalikult palju vett sõela kohal välja.

Pane ahi 175 kraadi juurde sooja. Määri kandilise ahjuvormi (23x30 cm) ääred võiga.

Haki ja rösti pähklid. Sega omavahel jahud, kaneel, riivitud muskaatpähkel, sooda, sool ja küpsetuspulber. Kui kasutad vanillisuhkrut, lisa ka see.

Teises kausis vahusta munad õhuliseks. Lisa suhkrud, õunapüree, sulavõi, sidrunikoor ning kui kasutad vanilliessenssi, siis ka see. Sega hulka (kolmes osas) jahusegu. Lisa ka suvikõrvits ja pähklid-rosinad, sega.

Vala tainas ettevalmistatud ahjuvormi, küpseta 175 kraadi juures 40-45 mintit ehk seni kuni koogi keskosasse surutud puutikk jääb puhtaks. (Mina kasutasin väiksemaid vorme, koogid küpsesid 25 minutit). Enne katte lisamist lase koogil täielikult jahtuda.

Katte jaoks sega omavahel toorjuust, kondenspiim ja sidrunikoor. Mina panin kondenspiima silma ja maitse järgi, kuid kate võiks olla pigem kontrastiks magusale koogile kui lääge võõp.

As can be seen in food markets, stores, the countryside and on the internet the zucchini/courgette season is full on. This cake is actually quite similar to carrot cake. Easy to make but tasty, a perfect dessert with tea. And just like other similar cakes, it only gets better with time. I found the cake the best 2 days after baking, not that I got to try it any later.



You'll need:
2.5 dl whole wheat flour
2.5 dl all-purpose flour
1 tsp cinnamon
1/2 tsp grated nutmeg
2 tsp baking soda
1 tsp salt
1/4 tsp baking powder
1 tsp vanilla sugar or essence
3 eggs
2 dl brown sugar
2.5 dl granulated, white sugar
1.5 dl apple sauce (may be substituted for butter or vegetable oil
1/2 dl melted butter or vegetable oil
1 tsp lemon zest
4.5-5 dl grated courgette* (I used 2 medium sized courgettes)
2 dl chopped walnuts
1 dl golden raisins (optional)

For the frosting:
150 g cream cheese
1/2- 1 tsp lemon zest
2-3 tbsp condensed milk

*Before measuring the grated courgette place it in a sieve and press out some of the excess moisture.
Preheat the oven to 175 degrees C. Prepare a squared (23x30 cm) non-stick pan by covering it with butter. I used smaller tins and baked 

Chop and toast the nuts. Set aside. Whisk together the flours, cinnamon, grated nutmeg, soda, salt and baking powder. If you're using vanilla sugar then add that too.

In another bowl whisk the eggs until light and fluffy. Add the sugars, apple sauce, melted butter, lemon zest and vanilla essence, if using. In three parts, stir in the flour mixture. Add the grated courgette, toasted walnuts and raisins, if using.

Pour the batter into the prepared pan and bake at 175 C for 40-45 minutes or until a wooden toothpick inserted into the centre of the cake comes out clean. (I used smaller cake tins and baked mine for about 25 minutes). Let cool before covering with the frosting.

For the frosting, incorporate the cream cheese, lemon zest and condensed milk. I didn't measure the condensed milk but tasted the frosting while adding it bit by bit. You'd want a mixture that isn't too sweet but a nice contrast to the cake.

Šokolaadi-piparmündijäätis / Chocolate Peppermint Ice Cream


Siiani tundus mulle kodune jäätisetegu võimatu, kuna minu köögis ei ilutse selle valmistamiseks mõeldud imemasinat. Seega olen siiani vaadanud kõikidest jäätiseretseptidest mööda. Seda jäätist kohtasin aga nii mõneski blogis ja lõpuks jäi pilk retseptil pidama. Nii selguski, et pole tarvis võlukepikest ega imemasinat, jäätist saaks teha isegi mehaanilise vahustajaga. Magustoit maitses ülihästi, osalt kindlasti tänu rammusale koorele. Siiski, tumeda šokolaadi ja piparmündi kooslus on imeline, viimast olen kiiruga lisanud ka poest ostetud stracciatellale.

Kasutasin nelja supilusikatäit hakitud piparmünti, kuid järgmine kord panen julgemini, viis supilusikatäit tundub uhkem. Mulle oleks meeldinud kui šokolaad oleks hamba all rohkem krõmpsunud, kes seda soovib võiks poole šokolaadist riivimise asemel hakkida. Arvestaga tuleb aga sellega, et väga rasked tükid võivad vajuda külmutades jäätisekarbi põhja.

Vaja läheb:
6 dl rõõska koort (35%)
300 g magusat kondenspiima
50 g tumedat šokolaadi (mitte alla 65% kakaod)
3-5 sl hakitud värsket piparmünti

Vahusta koor tugevaks vahuks, lisa kondenspiim, vahusta kuni ained on segunenud. Sega hulka riivitud või hakitud šokolaad ja purustatud piparmündilehed. Aseta segu säilituskarpi ja külmuta vähemalt 5 tundi. Kuskilt kuulsin, et kodutehtud jäätis kaua ei säili, seega talveks pole tarvis teist ette teha.

So far it seemed to me like homemade ice cream was something I was never going to make as I don't own such a machine with superpowers. That's the reason I never even bothered looking into homemade ice cream recipes. But after this recipe started appearing in numerous food blogs I bothered reading it through. It doesn't require a magician's powers, just a whisk, even a mechanical one would do. The ice cream tasted delicious, partially thanks to the heavy cream, even though the peppermint and dark chocolate combination never lets one down.

I used 4 tablespoonfuls of chopped peppermint leaves, next time I'll go with 5. I would actually have liked if the chocolate had been crunchy under the tooth, so next time I'll chop half of it instead of grating it.

You'll need:
6 dl heavy cream
300 g sweetened condensed milk
50 g dark chocolate (min 65% cocoa)
3-5 tablespoonfuls of fresh peppermint leaves

Whisk the cream until stiff and firm, add the condensed milk and whisk until combined. Chop or grate the dark chocolate (very big chunks are likely to fall to the bottom of the ice cream while freezing) and add to the cream along with the chopped peppermint. Freeze for a minimum of 5 hours. I've heard that homemade ice cream doesn't keep well, so there is no point in making a whole batch ahead for the winter.

Maasika toorjuustukoogid iirisega / Strawberry Cheesecakes with Toffee


Vabaduse väljaku servas asuvas kohvik-restoran-lounge'is Mosaiik pakutakse suussulavat laimi toorjuustukooki just sellistes purkides. Kui kaval! Ja nunnu! Kohe kui ma neid nägin teadsin, et ka mina pean sellised endale soetama. Need 200 ml purgid on ideaalsed üheinimseportsud ja kui kook söödud, saab nendes ju kõiksuguseid kuivaineid eksponeerida.

Nendel väikestel purgikestel on ka see eelis, et neisse saab teha kõiki želatiini nõudvaid kooke, ilma seda kasutamata. Võibolla ei ole see kõigi jaoks nii oluline, kuid peale seda, kui ma teada sain, kuidas želatiini saadakse, ei ole olnud tahtmist seda kasutada. Veel saab nendes purkides kooke lihtsalt säilitada ja piknikule või külla mugavalt kaasa võtta.

Maitsest ka. Iirisesed küpsised olid nii head, et nende kogus vähenes kookide meisterdamise ajal märgatavalt. Kindlasti teen nii mõnelegi teisele koogile sellise põhja. Kook oli mõnusalt kreemine, kuigi mina ootasin midagi enamat. Kõigile teistele meeldis aga väga, väikevend käib ja nurub, et ma sinna purgi sisse veel kooki teeksin :)

Vaja läheb:
5 x 200 ml purke või klaase

70 g pehmeid iiriseid
3 spl piima
umbes 100 g muredaid küpsiseid
150 ml rõõska koort (35%)
250 g toorjuustu (tunnistan, et kasutasin lahjat)
5 spl tuhksuhkrut
1/2 spl vanillisuhkrut
umbes 250 g maasikaid


Sulata iirised potis pidevalt segades piimaga. Purusta küpsised ja sega 2/3 iirisekastmega. Vahusta koor, lisa sellele toorjuust ning suhkrud, sega. Lõika maasikad tükkideks. Aseta klaasidesse või purkidesse vaheldumisi küpsisepuru, toorjuustukreem ning maasikad. Kõige peale nirista iirisekastet (kui viimane on selle aja peale ära hangunud, siis sulata see sörtsu piimaga jälle üles). Serveeri hapude marjadega.

There is a cafe-restaurant-lounge in the center of Tallinn called Mosaiik. There they serve a delicious lime cheesecake in cute jars like these and the moment I saw them I knew I had to purchase them. They are so cute! As well as practical, as 200 ml is just the right amount of cheesecake for one. Meanwhile, when these jars are not filled with cake (don't worry they wont be for long) you can use them to store and exhibit various seeds and nuts.

Another positive thing about these jars is that you can make all the cheesecakes that require gelatin without using the stuff. Maybe this is not as important to everyone as it is to me, but after I found out where gelatin comes from I have tried to ignore it. And well, I haven't bothered looking into agar-agar.

This is enough reasons to buy these jars, right? Convinced myself at least. I bought mine from Prisma in Kristiine keskus in Tallinn.





Oh, about the strawberries. Do try to get real stuff, the Spanish ones are nothing compared to home grown ones. About the cakes too. The fudgy biscuits were so good, they passed the "quality test" with major casualties. I am definitely going to use that idea for other cheesecakes too. The cream cheese layer was nice and creamy, although I expected something a little more spectacular from the cake. But everyone else loved them and now my little brother keeps asking for cake in "those jars".

You'll need:
5 x 200 ml jars or glasses

70 g soft plain toffee or fudge (cut into cubes)
3 tbsp milk
about 100 g biscuits (such as Digestives)
150 ml double cream (35%)
250 g cream cheese (I confess, I used light)
5 tbsp confectioner's sugar
1/2 tbsp vanilla sugar
about 250 g strawberries


Stirring vigorously, melt the fudge with milk on medium-high heat. Crush the biscuits and mix with 2/3 of the melted fudge. Whisk the double cream and integrate with the cream cheese and sugars. Cut the strawberries into pieces. Layer the biscuits, cream cheese and strawberries one after another in the jars. Top with the remaining melted fudge. If it has solidified by that time, just add a tablespoonful of milk and melt it. Serve with sour berries.

Rabarbrikook kondenspiima ja beseekattega / Rhubarb Cake with Condensed Milk and Meringue


Jah, ma tean, rabarbrihooaeg on juba ammu kinni kuulutatud. Mina aga sain paar nädalat tagasi naabrinaiselt suure posu rabarbrit, mis vajas ära tegemist. Ei raatsinud kõike kiiruga moosiks ega kisselliks teha, panin muist külma, kindla plaaniga see võimalikult kiiresti ära teha. Ei, talveks ei raatsi jätta.

Selle koogi retsept jäi mul kohe alguses silma, leppisin iseendaga kokku, et seda peab veel enne rabarbrihooaja lõppu proovima. Kel viimane rabarber juba ammu sügavkülmas, sel soovitan see retsept kõrva taha, või siis bookmarks'idesse, panna, et talvel hinnalist kraami just selle koogi jaoks kasutada, sest see on seda väärt.

Retsept on Siit nurgast ja sealt nurgast. Vaid kliki kaugusel, seega ei hakka seda siia ümber kirjutama ega kleepima. Küll aga lisan, et poole ehk 1.5 dl põhja jahust panin täisteranisujahu ja teen seda kindlasti ka järgmine kord. Siis panen põhja veidi vähem võid, arvatavasti vähendan ka suhkru kogust. Täidis küpses mul küll kauem kui 30 minutit, siis oli ta veel vedel ja oleks vormist välja võttes laiali valgunud. Küpsetasin seda kuni tahke ehk 45 minutit.



I am fully aware that the rhubarb season is over or ending, in Europe at least. A few weeks ago, however, my neighbour, who had plenty in her garden, and probably still does, gave me a generous bunch of stalks. I was overwhelmed, because the new mower guy had not even noticed our rhubarb bush and ran over them all. Well, you can't blame him, as the grass was so high at the countryside, he couldn't even tell something had been planted there. So that was that with my rhubarb. With a few recipes in mind, I didn't want to turn what had been given by my neighbour into jam, so I froze it.

This recipe caught my eye the first time I saw it and I promised myself I would try it out this rhubarb season. Those who have already frozen the last of their rhubarb should keep this recipe in mind or in their bookmarks and use the precious stuff during winter for this cake, as it's really worth it. The condensed milk layer was exceptionally delicious :)

The recipe is from this Estonian food blog. She does actually have two recipes in English too, both hits.

This cake is for a bigger springform or pan, half the size of a baking sheet. I made it in a 24 cm springform and had some batter left over that I used to make 3 individual cakes in muffin tins. The end result was quite sweet, so next time I will probably reduce the amount of sugar in the base as well as the butter.


You'll need:

Base
3 dl flour (I used 1.5 dl whole wheat - worked just fine)
1 tsp baking powder
150 g butter, at room temp
1,5 dl sugar
1/4 tsp salt
1 egg


Filling
3 egg yolks
400 g sweetened condensed milk
1 dl sour cream or 10-20% crème fraiche
350-400 g chopped rhubarb


Meringue topping
3 egg whites
1.5 dl sugar


For the base, Integrate the flour and baking powder. Whisk the butter and sugar until light yellow and creamy. Add the salt, egg and flour-baking powder mixture. Spread the batter on a prepared baking sheet or springform. Make sure the edges of your baking sheet are at least 3 cm high to avoid spilling. Bake at 200 degrees for 10 minutes. Take the cake out and reduce the temperature of the oven to 180 degrees C.

For the filling, whisk the egg yolks and mix with the condensed milk and sour cream. Combine with the rhubarb. Pour on top of the base and bake at 180 degrees for 30 minutes. (Mine was still very runny after 30 minutes so I baked it for 45 minutes, until solid but tender). Take the cake out of the oven but leave it on.

For the topping, whisk the egg whites with the sugar until solid. Add the sugar to the egg in three parts during whisking. Spread on top of the cake and bake at 180 derees for another 10 minutes or until the meringue starts turning golden.

Let cool and cut with a wet knife, this way you won't break the meringue.

Mustika ja valge šokolaadi muffinid / Blueberry and White Chocolate Muffins


Kõik algas Tassikeses asuvate ,,Maailma parimate rabarbrimuffinitega". Neid oli nii seal kui nami-namis ohtralt kiidetud. Ühes kommentaaris mainis Merit, et tema lemmikmuffinid on küll mustika ja valge šokolaadi omad, kuid kindlasti proovib need ka järgi. Oot-oot-oot, neid mustika ja valge šokolaadi omi olin ma näinud küll. Millegipärast vaatasin neist algul mööda. Lähemal uurimisel selgus, et koostisainete järgi võiksid need muffinid head olla küll. Valget šokolaadi olin kasutanud ka kodu- ja toorjuustuga koogis, mis oli üks õnnestunud leid. Otsustavaks sai aga sidrunikoor, mis eelnevast kogemusest sobis mustikatega ülihästi. Ja nii paningi poenimekirja nii maailma parimate rabarberimuffinite, kui ka mustika ja valge šokolaadi koogikeste koostisained. Nüüdseks olen viimaseid mitu korda teinud.

Ma küll ei taha võistlusmomenti tekitada, kuid mulle meeldisid mustikamuffinid rabarbri omadest rohkem. Aga võibolla ei ole ma õige inimene otsustama, kuna ma olen suhteliselt nadi martsipanisööja.

Muffinid on hästi mahlased ja pehmed, minu omad jäid pealt kergelt krõbedad. Nii tekkis see pehme ja krõmpsu kontrast, millest ma vist kunagi ei väsi. Valge šokolaadi tekstuur muutub tainaga koos mõnusalt siidjaks. Mulle maitsesid muffinid kõige rohkem leigena, sest siis ei olnud šokolaad veel hangunud ja see sulas suus. Ja sidrunikoor ning mustikad on endiselt üllatavalt hea kooslus.

Allikas: Hea toit, parem elu. Nagu seal märgitud, võib mustikad asendada jõhvikatega ja sel juhul sidruni koor apelsini omaga. Siis tasub kasutada ka 200 g šokolaadi.

Vaja läheb (12 tk):
100 g sulavõid
200 ml petti
1 sidruni riivitud koor (soovi korral, aga soovitan soojalt)
250 g jahu
1,5 tl küpsetuspulbrit
noaotsatäis (1/4 tl) soola
noaotsatäis (1/4 tl) söögisoodat
2 suurt muna
150 g peeneteralist suhkrut (caster sugar) (120 g on ka täitsa piisav, eriti kui kasutada kultuurmustikaid)
250 g (külmutatud) mustikaid või jõhvikaid
100-200 g valget šokolaadi, hakitud šokolaadi chippide suurusteks tükkideks


Sega omavahel või, pett ja riivitud sidrunikoor. Tõsta kõrvale. Sega omavahel jahu, küpsetuspulber, sool ja sooda. Mikserda munad ja suhkur kohevaks. Lisa või ja peti segule ning mikserda ühtlaseks. Lisa õrnalt segades jahusegu. Sega tainast nii palju kui vaja, kuid nii vähe kui võimalik. Sega sisse mustikad ja hakitud šokolaad (mina kasutasin 100 g). Kui kasutad külmutatud mustikaid, siis ära neid enne tainale lisamist sulata. Täida pabervormidega vooderdatud muffinivormid tainaga ja küpseta 190 kraadises ahjus 20-25 minutit kuni muffinid on pealt kuldsed.



On the site where I found the recipe for "the World's Best Rhubarb Muffins" I also found a link to these. I had seen the recipe before but not given it much thought. At a second inspection at the ingredients I decided to try them out. I had used white chocolate in a cottage and cream cheese cake and that had turned out a success. And I knew from before that lemon peel and blueberries work really well together.

As I expected, these were delicious, moist and soft. Mine were slightly crispy on top, which gave them the soft and crunchy contrast, something I don't seem to grow tired of. The white chocolate is alluring, combined with the batter, it turns the texture almost silky. I personally liked the muffins best when they were still a little warm as the white chocolate hadn't solidified yet.

Source: Hea toit, parem elu. As suggested there, these can also be made with cranberries. In that case substitute the lemon peel for orange peel and use 200 g of white chocolate.

You'll need (for 12):
100 g melted butter
200 ml buttermilk
peel of one lemon (optional, but I strongly recommend)
250 g all-purpose flour
1.5 tsp baking powder
1/4 tsp salt
1/4 tsp baking soda
2 large eggs
150 g caster sugar (120 g was fine too, perhaps even better if using sweet blueberries)
250 g (frozen) blueberries or cranberries
100-200 g white chocolate, chopped into chocolate chip size pieces


Incorporate the butter, buttermilk and lemon peel. In a separate bowl whisk the flour, baking powder, salt and baking soda. In another separate bowl whisk the eggs and sugar. Add the egg mixture to the buttermilk one and whisk. Gently stir in the flour mixture, just until combined. Stir in the blueberries and white chocolate (I used 100 g). If you are using frozen berries, don't melt them before, as they'll colour the batter blue. Divide the batter between 12 lined muffin tins and bake at 190 degrees C for 20-25 minutes until the muffins are golden brown.

Kookospähklised ploomikommid / Coconut Prune Sweets



Raffaellod on mul lapsepõlvest meeles kui need imemaitsvad, kreemised, krõmpusvad kommid, mida sai üliharva, tähtpäevadel, ja siis sai neid ka kuskil salaja söödud. Ja see reklaam! No see, kus valges kleidis naine valgete roosidega toas ringi liugleb (ei, ta ei ole kummitus) ja siis nii ahvatlevalt raffaellot sööb, et mul on see siiani meeles on. Võibolla selle pärast ei haaragi poes käsi nende kommide järele, et pole sündmust, mille puhul neid süüa. Vot just sellised nostalgilised mälestused tekkisid mul nende kommidega. Sees on kookospiimas keedetud mustad ploomid, mille kivi on asendatud mandliga, ümber on valge šokolaad ja krõmpsuvad kookoshelbed. Me kõik mõmisesime neid süües :)

Retsept on blogist Bounteous Bites. Seal ei ole ploomide sisse pandud mandleid, kuid soovitan seda kindlasti teha. Veel tekkis neid süües idee lisada keetmisel kookospiimale konjakit või amarettot, arvan, et see oleks proovimist väärt.


Vaja läheb (umbes 30 kommi):
2 dl ehk umbes 30 kuivatatud kivideta ploomi
2 dl kookospiima
umbes 30 mandlit
umbes 120 g valget šokolaadi
umbes 2 dl kookoshelbeid


Keeda ploome kookospiimas ilma kaaneta 10-15 min. Eemalda kuumuselt ning lase jahtuda. Kui vedelikku on liialt alles, nopi ploomid kõigepealt välja.
Sulata šokolaad vesivannil. Vala katmiseks väiksesse kaussi ports kookoshelbeid. Valmista ette ka alus, kuhu komme asetama hakkad foolium/küpsetuspaber/silikoonmatt (nt kata fooliumiga lõikelaud - seda saab mugavalt tõsta).
Pista igasse ploomi mandel, seejärel kasta šokolaadi sisse. Lase üleliigsel šokolaadil maha nõrguda ning veereta kommi kookoshelvestes (võid neid veidi kõvemini suruda, et nad ümaramad jääksid). Seejärel tõsta alusele tahenema. (Kasutada võib kahte lusikat, ühte ploomide šokolaadis keerutamiseks ja teist kookoshelvestega katmiseks, et kookoshelbed šokolaadi sisse ei satuks). Säilitada võib neid nii külmkapis kui toatemperatuuril, esimese puhul on šokolaad krõmps ja kindlasti säilvad kommid kauem. Neid toatemperatuuril hoides kipub šokolaad pooleks hammustades aga ploomi küljest lahti tulema.




I remember Raffaellos from childhood as the delicious, creamy, crispy sweets that I hardly ever got. These were special occasions and even then I ate them in secret from my sister and brother. And that TV ad! The one where a woman in a white dress swings around a room full of roses (no, she is not a ghost), finds a box of Raffaellos and eats them in such a delicious way. Maybe this is why I never buy Raffaellos, because there is never the right time to eat them. Anyways, these memories came to my mind when eating these sweets. Inside, there is a prune boiled in coconut milk that's seed has been replaced my an almond. It's covered with crispy white chocolate and coconut flakes. We all moaned when we ate these :)

The recipe is from Bounteous Bites, an Estonian blog in both Estonian and English. The original recipe doesn't call for almonds but I highly recommend using them too, they are an essential part of the Raffaelloness. A thought that crossed my mind when eating these, was to add some amaretto or cognac to the coconut milk when boiling. I think this would be worth a try.

You'll need (about 30 sweets):
2 dl (about 30) pitted prunes

2 dl coconut milk
about 30 almonds
about 120 g white chocolate
about 2 dl coconut flakes


Without covering the saucepan boil the prunes in coconut milk for 10-15 minutes. Let cool. If there's a lot of coconut milk left, pick the prunes out.
Melt the chocolate over a waterbath. Prepare a small bowl of coconut flakes to roll the sweets in and roll out some parchment paper, foil or a silicone sheet to place them on.
Press an almond into each prune and dip into white chocolate. Let the excess chocolate drip off, with a spoon roll the candy in coconut flakes, pressing a little harder at times to get a round shape. Place on the prepared parchment paper to cool. Using two teaspoons will avoid the coconut flakes getting into the chocolate and creating a mess. I refrigerated the sweets and ate them cold as the chocolate is crispy at a lower temperature. Keeping them at room temperature will make the chocolate softer and most likely cause it to drop off when you bite.

Rabarberitrühvlid / Rhubarb Truffles


Need rabarbritrühvlid on, jällegi, ideaalne magusa-hapu ja pehme-krõmpsuva kombinatsioon, sest haput rabarbrit tasakaalustab suussulav valge šokolaad samal ajal kui pähkel hamba all krõmpsub. Nii peabki.

Retsepti leidisn Bounteous Bites blogist, kus on nõutud roosivett. Minul seda aga polnud, seetõttu kasutasin apelsiniõievett. Panin vist seda liiga vähe, igastahes maitset tunda küll ei jäänud. Kuid kommid olid nii külluslikud, et millestki puudu küll ei tulnud. Seega võib selle koostisosa soovi korral välja jätta.

Minu väljamaine rabarber oli vist magusamat sorti, kui see, mida Eestis müüakse/kasvatatakse, seega, kelle rabarber on jumal-teab-kust, sel soovitan suhkru kogust veidi alandada, nii poole detsiliitri võrra.

Vaja läheb:
300 g rabarberivarsi (2 suuremat või 3 väiksemat)
2 dl suhkrut
2-3 spl roosi-, aplesiniõie- või tavalist vett
umbes 100 g valget šokolaadi
umbes 150 g hakitud mandleid


Koori rabarbrivarred (noored varred võib ka koorimata jätta) ning lõika parajateks ampsusuurusteks lõikudeks. Pane need paksupõhjalisse potti ning lisa sinna otsa suhkur ja roosi, apelsiiniõie- või tavaline vesi.

Kata kaanega ning kuumuta, kuni suhkur ja mahl on moodustanud siirupi. Keeda madalal tulel, kuni rabarber on pisut pehme, aga mitte veel katki. Mina keetsin neid 4 minutit ja mõni pisem tükk hakkas juba lagunema. Kuid algretseptis on küsimärgiga soovitatud neid keeta kümme minutit. Seega hoia pilku peal, kui neid keedad. Vahel sega väga ettevaatlikult või keera tükke pea alaspidi.
Lase rabarberil siirupis jahtuda, eelistatult üleöö.

Patsuta rabarber köögipaberil natuke kuivemaks, siirup jäta hilisemaks kasutamiseks kindlasti alles. Sulata šokolaad vesivannil ning surka iga tükk šokolaadi, pärast seda ka mandlipurusse. Komme võib mandlipurus veidi kõvemini suruda, et nad ümarama kuju võtaks. Siis tõsta kommid fooliumile või küpsetuspaberile tahkuma. Hoia külmas. Mulle meeldis neid süüa külmkapikülmalt, sest siis oli valge šokolaad mõnusalt krõbe.




These rhubarb truffles are yet another excellent example of how well sweet and sour and crispy and soft work together. The sour rhubarb neutralises the sweet white chocolate as the crispy nuts break under the tooth. This is what an ideal sweet is.

The recipe is from Bounteous Bites, an Estonian food blog in both Estonian and English. The original recipe calls for rose water that I didn't have so I substituted it with orange blossom water. However, I couldn't taste that in the result at all. But it didn't feel like anything was missing so leaving the rose water out wont do any harm.

My rhubarb seems to be of a different, sweeter, type than the ones sold and grown in Estonia. So if your rhubarb is from whoever knows where then I suggest reducing the amount of sugar by about half a deciliter. Also mine took a lot less time to boil. As a comparison, Estonian rhubarb is usually pink whilst mine was green.

You'll need:
300 g rhubarb stalks (two bigger ones or three smaller ones)
2 dl sugar
2-3 tbsp rose, orange blossom or regular water
about 100 g white chocolate
about 150 g almond meal


Peel the rhubarb stalks (you may skip the peeling part if the stalks are young) and cut into bite-size pieces. Place the pieces into a saucepan with the sugar and (rose) water.
Cover with a lid and heat until a syrup forms (about 2 minutes). Boil at low heat until tender, but not broken (three to ten minutes), occasionaly gently stirring or turning the pieces around.
Let the rhubarb cool down in the syrup, preferrably let them soak overnight.

Pat the pieces on a paper towel to remove any excess syrup. Reserve it for later as you can make a juice out of it by adding water. Melt the white chocolate over a waterbath and dip each piece into it before rolling in the almond meal (feel free to press them a little harder for a round shape), then place the sweets on a cooking paper and refrigerate. I liked them best right out of the fridge as the chocolate was crispy then.

Pehmed kahe šokolaadi tükkidega küpsised / Soft Double Chocolate Chunk Cookies


Subway on Ameerika kiirsöögikoht, mis on laienenud ka Euroopasse. Selle menüü sarnaneb Kristiine keskuses asuva XPRES Deli'ga, seega polegi tegu ühe tüüpilise ameerikaliku burgerikohaga. Kes kunagi sellesse söögikohta satub, sellel soovitan neid küpsiseid proovida. Need on seest veidi pehmed ja sulavad suus, ääred on aga krõbedad. Kuna need on tõesti suur hitt, siis otsustasin neist kõige paremaid - Double Chocolate Chunk küpsiseid - järele teha. See versioon on täisterajahuga, kuid kasutada võib ka tavalist nisujahu. Minu vend, kui suur Subway küpsiste armastaja, kiitis heaks ja tegi neid isegi koos sõpradega.

Anyone who has ever tried Subway cookies knows how nice the soft center part surrounded with a crunchy edge is. These are just like the Subway chocolate chip cookies, except you can make them whole grain. My brother, as a big Subway cookie fan, approved these and even made them with his friends.

“Maailma parimad rabarbrimuffinid” martsipaniga / "The World's Best Rhubarb Muffins" with Marzipan

 

Lugesin, et nii paljulubavat pealkirja lugedes ei teki eestlastel soov retsepti mitte maitse pärast järgi proovida, vaid selleks et tõestada, et tegelikult ei ole need sugugi parimad muffinid. Minu puhul küll nii ei olnud, mõtlesin pigem, et kui on maailma parimad, siis peab ju järgi proovima, sest millestki nii heast ei saa ju ilma jääda. Kuna ma pole oma elus väga palju rabarbrimuffineid saanud, siis ei osanud millegagi võrrelda, head olid nad aga küll, seest mõnusalt mahlased, kuid mitte liiga magusad.

As I read, most Estonians wouldn't try out a recipe with a name like this for the taste but to prove the author wrong, that no these are not the best after all. Indeed, a name like this is quite provocative but I made them to try out the best of the best as you wouldn't want to miss something like this. I haven't had many rhubarb muffins in my life so I didn't have anything to compare them to even though they were yummy, moist and not to sweet.

Lõigatud šokolaadiküpsised / Cut Chocolate Biscuits



Kuna siinkandis pole Eesti küpsistega just laiata, siis tegin maasikate ja šokolaadiga küpsisekoogi jaoks need ise. Kuigi need küpsised ei sarnane eriti Eesti küpsistele, olid nad väga head ja sobisid kooki hästi. Kui aus olla siis ma proovisin kahte retsepti, millest jäi peale just see. Leigena olid nad väljast krõmpsud, kuid seest veidi pehmed, just nii meeldisid nad mulle kõige rohkem. Paljalt söömiseks soovitangi neid paar minutit vähem küpsetada.

Due to the lack of Estonian biscuits here in Luxembourg I made these to substitute for the biscuit cake with strawberries and chocolate. They are not very similar to the original ones, nevertheless, they were tasty and suited in the cake. As a matter of fact I tried two different recipes and these biscuits were a lot better. Lukewarm, they were crunchy on the outside but still slightly soft inside which I like the best. If you are making them for the purpose of eating not to be put into the cake then I suggest you reduce the baking time by a few minutes.

The simplicity and taste of this cake reminded me of Estonian summers, as biscuits and cream are often used to make effortless but tasty cakes. This one contains a minty caramel mix Marianne Crush, that gave the cake an interesting tinge.

Rabarbrikook kondenspiima ja toorjuustuga / Rhubarb and Cream Cheese Cake with Condensed Milk



Minu jaoks täiesti uut moodi toorjuustukook, milles on kõik veidi teisiti, kuigi lõpptulemus on väga maitsev. Esiteks pole ma kunagi söönud toorjuustukooki rabarbriga, teiseks pole ma kunagi teinud juustukooki kondenspiimaga ja kolmandaks ei ole ma valmistanud ise algusest lõpuni nii head koogipõhja. Viimane maitses just nagu Digestiivi-küpsised. Selles koogis on kõik maitsed omavahel tasakaalus nagu magus-hapu ning pehme (lausa siidjas) ja krõbe. Just nagu mulle meeldib!

This cake has quite a different take on cheese cakes, but the result is delish. First off, I have never baked a cheese cake with rhubarb, neither have I ever put condensed milk in one or made such a tasty, Digestive biscuit-like, base from scratch. All the tastes are balanced in this cake, like the sweet and sour as well as silky cream and crispy base.

Tartelettes aux Fraises



Tartelettes aux Fraises ehk maasikakoogikesed on üks Prantsuse klassika. Need muretaignakorvikesed on täidetud paksu crème Anglaise'iga ja kaetud maasikatega. Nii lihtne see ongi! Kuid maitse on suurepärane.

Tartelettes aux Fraises are a true French classic. The pate sablée bases are filled with thick crème Anglaise and covered with strawberreis. And that's how easy it is! But the taste is delish.

Mandlicroissantid / Almond Croissants

Nagu Prantsusmaalgi müüakse croissante siin kõikides kohvikutes ja pagariärides ning neisse pannakse igasuguseid suussulavaid täidiseid. Hommikul tuuakse meile kooli veoautoga üüratu hunnik värskeid saiakesi, mille järgi siis kogu kool lõhnab. Ja juba paari tunni pärast on kogu see saiakeste mägi kui õhku haihtunud. Ausõna, kes saiakest tahab peab lõuna alguses kohvikusse jooksma! Üks croissant'idest, mis sisaldab šokolaadi ja mandleid on aga eriti hea ja seda ei müüda mitte kuskil mujal. Paar päeva tagasi arutasime sõbrannaga, et neid saiakesi hakkame me küll tagaigatsema. Seega otsustasin haarata ohjad ja proovida teha midagi veel paremat. Ja õnnestus!

Just like in France, they sell croissants in every shop, caffee and bakery here. And the different fillings they put into them are just delicious. A lorry full of fresh pastries brings lunch to our school every morning, making the whole building smell luscious. Only a few hours later the whole pile of pastries has varnished. You really have to rush to get any! My favourite, a croissant they sell, contains chocolate and almonds. Just a few days ago a friend and I were discussing how the fresh pastries really are something we are going to miss about this school. So I decided to take matters into my own hands and try to make something even better. And I believe I did quite well.
