Pukkola

Pukkola koosneb öö läbi piimas leotatud erinevatest hommikusöögi-helvestest, kuivatatud puuvijadest ja pähklitest/seemetest. Põhimõtteliselt külm puder: järjekorde mõnus vaheldus tavalisele pudrule. Ja hommikul jääb sättimiseks aega üle, kuna toit valmib ise öö jooksul.

---------------------------------------------------------------------------------------------------------------------------------

You might be wondering what Pukkola is. It's rolled oats, cereals, dried fruit and nuts soaked in milk overnight. Like cold porridge or soaked cereals. Saying soaked cereals doesn't do justice to any food, does it?

See selleks.

Paks on teine, kokku üle neljasaja lehekülje.

As the royal wedding is approaching, there are British days in the local supermarket. As well as American (I doubt the locals have got the difference). Therefore, we have the chance to buy British (and American) goods, shipped in especially, that you could not find on the shelves normally. To be honest the American section was hideous, with some sweets and steak sauces (no A1, though) and the rest was soda like pepsi that you can buy from any store. The British section, however, was full of Jamie Oliver stuff, such as pestos, pastas, sauces and, of course, his cookbooks. It seemed like they had all of them. I managed to leave with just one pesto, leaving all the other tasty stuff there.

When I got home I swiped off the dust from my Jamie's cookbook and, without any intention to cook anything, started flipping through it. By now there book is stuffed with post-it notes, and I haven't even finished it. It's quite bloody thick though, about 400 pages.

That reminded me that I had stumbled on his Pukkola recipe on the internet a while ago. The recipe seemed stupidly easy to remember so I have been just throwing a handful of this and a handful of that in a bowl, tossing it over with milk and into the fridge. The only thing I remember is that it was talked about in the superlative all over the site. Now I have marked town the amounts to write them down here.

Just as a quick note: it has to sit in the fridge overnight or about 8 hours. But look at it from the positive side: no need to prepare or cook anything in the morning, meaning more sleeping time.

You'll need (for one):

5 Tbsp of different flakes and cereals (eg oat, rye, spelt, puffed rice, cornflakes, bran etc)
1 tsp of cinnamon
half a handful of dried fruit, cut into pieces the size of raisins (eg. apricot, dates, apples, prunes, cranberries etc)
half a handful of any nuts, may be cut into halves
1/2 apple, grated
(honey)

about 200 ml on milk
1/4 a banana, cut into pieces

Mix all the dry ingredients with the grated apple and pour the milk on top so that they are fully covered. Cover the bowl with plastic film and cool in the fridge for 8 hours or overnight. If all the milk has been absorbed by the morning add a bit more until you have reached the desired consistency. Add the banana slices. May be served with fresh fruit and yoghurt.
